Watercress Vichyssoise

Puree the soup in a blender adding the pear, watercress and cream
- 6 Cups prepared potato soup
- 1 Medium size pear ripe, peeled and cored
- 2 Bunches of watercress, leaves only
- 1 Cup of heavy cream
- Grated rind of one lemon
Chocolate Cheesecake

In a small bowl, combine cookie crumbs and sugar; stir in butter
- Filling:
- 1 Cup Crushed Chocolate Wafer Crumbs
- 3 Tbls Sugar
- 3 Tbls Butter or Margarine, Melted
- 2 Cups (12 oz) semisweet Chocolate Chips
- 2 pkgs (8 oz each) Cream Cheese softened
- 3/4 Cup Sugar
- 2 Tbls All-purpose Flour
- 2 Eggs
- 1 teas Vanilla Extract
- Strawberries and White Chocolate Shavings, optional
Festive Winter Salad

Mix all ingredients
- 1 Package salad mix
- 1 Thinly sliced tart apple
- 1 Package blue cheese cumbled
- 1/4 Cup extra virgin olive oil
- 1/2 Cup balsamic vinegar
- Salt and pepper to taste
Flan de Coco

Preheat the oven to 350 degrees
- 1 Cup of Sugar
- 2 Cups Light Cream or Half and Half
- 4 Large Eggs
- 2 Large Egg Yolks
- 1 Can Shreaded Coconut
- 1/2 Teaspoon Vanilla
Mandarin Orange Salad

Shake dressing ingredients in tightly covered jar and refrigerate
- DRESSING:
- 1/2 tsp. salt
- Dash pepper
- 2 T. sugar
- 4 T. vinegar
- 1/2 cup vegetable or canola oil
- Dash of Tabasco sauce
- 1 Tablespoon snipped parsley
- SALAD:
- 1/2 cup sliced almonds
- 3 T. brown sugar
- 1/2 head iceberg lettuce, chopped
- 1 head romaine, torn in small pieces
- 1 cup chopped celery
- 2 scallions, sliced
- 1 (11-oz) can mandarin oranges, drained
Spicy Tomato Soup

heat olive oil in a deep saucpan over medium heat
- 1 Tablespoon olive oil
- 1 Medium red onion chopped
- 1 Medium clove of garlic
- 1 Teaspoon salt
- 1/8 Teaspoon freshly gound pepper
- 1/4 Cup cilantro stems cut into 1/2 inch lenghts
- 1/2 jalapeño pepper, seeded and finely diced
- 1 28 oz can plum tomatoes
- 1 Tablespoon fresh lime juice
- 1/4 Cup sour cream
Asian Style Baby Back Ribs

Pat ribs dry. Combine molasses,garlic salt,onion powder and worceshershire
- 1 1/2 lb. pork baby ribs
- 1 tbsp. garlic salt
- 1 tsp. onion powder
- 4 1/2 tsp. molasses
- 1 tsp. worcestershire sauce
- GLAZE
- 1/2 cup soy sauce
- 3 tbsp.thawed pinapple concentrate
- 2 tbsp. rice vinegar
- 2 tbsp. hoisen sauce
- 2 tbsp. ketchup
- 1 tsp. lemon juice
- 1/2 tsp. minced garlic
- chopped green onion
- 1 tsp. whole grain mustard
- 1 tsp. worcestershire sauce
- 1 tsp. minced gingeroot
Lemon Chicken Salad

In medium bowl combine dressing ingredients: mix well
- 3/4 Cup sour cream
- 1/3 Cup mayonnaise
- 1 Teaspoon salt
- 3/4 Teaspoon grated lemon peel
- 1/4 Teaspoon freshly ground pepper
- 1/4 Teaspoon Worcestershire sauce
- 4 Whole chicken breasts poached and cut into 1/2 inch pieces
- 1 Cup sliced celery
- 1/2 Cup sliced green onions
Broccoli Soup with Cheddar Toast

- 1 1/2 Tablespoon extra virgin olive oil
- 1 Medium onion
- 2 Garlic cloves
- 2 Bunches of broccoli (about 3 1/2 pounds)
- 7 Cups of chicken broth
- 1 Teaspoon coarse salt
- 1 Cup milk
- 1/8 Teaspoon cayenne pepper
- 2 Oz. extra sharp cheddar cheese grated
- 8 Thin slices crusty baguette
Tuscany Mushrooms
