Meat Patties Smothered in Mushrooms
- 1 lb chopped meat
- 1/4 cup bread crumbs
- 1 egg
- salt,pepper,about a tsp each garlic powder,onion powder and paprika
- 3 Tbs oil
- 1 onion,chopped
- 1 clove garlic,chopped
- 1 box mushrooms,cleaned and sliced
- 2 Tbs flour
- 1/3 cup cooking sherry or red wine
- 1 1/2 cups chicken broth
- salt and pepper to taste
- chopped parsley
Combine and form into patties,you can do large or small ones. Spray a saucepan with Pam,heat and saute patties over meduim-high heat to desired doneness. Put patties aside on a plate,and wipe out the pan.
Saute the onion in the oil until transparent,add the mushrooms and saute a few min more. Sprinkle with flour and continue sauteing,stirring until flour start too stick and turns brown(becomes a roux) Add the sherry,broth, and salt and pepper. Bring to a boil and simmer until it starts to thicken,adjust seasonings and add more water if the sauce is too thick. Put the patties back into the pan,with the sauce,and simmer together another minute to reheat and coat. Garnish with parsley.
