Pasta with Vodka Cream Sauce

Ingredients
- 1/2 lb uncooked penne pasta
- 1 T olive oil
- 1/2 c finely chopped onion
- 1 teas salt, divided
- 1/4 teas crushed red pepper
- 1 clove garlic
- 1/2 c vodka
- 1/4 c fat free less sodium chicken broth
- 1 14/5 oz can diced tomatoes,undrained
- 1/4 c whipping cream
- 3 T thinly sliced fresh basil

Preparation
Step 1
Cook pasta according to directions.
Heat oil in skillet over medium heat. Add onion to pan; saute until tender. Add 1/4 teas salt, pepper, and garlic; saute 1 1 minute. Add vodka; bring to boil. Reduce heatm, and simmer 3 minute or until liquid is reduced by half. Stir in 1/2 teas salt, broth, and tomatoes; bring to boil. Reduce heat, simmer 8 minutes. Place tomatoe mixture in blender. Cover with lid with center removed to allow steam to escape; Cover with clean towel and blen until smooth. Return tomato mixture to pan and stir in cream. Cook 2 minutes over medium heat, stirring constantly. Remove from heat and stir in cooked pasta, remaining 1/4 teas salt and basil.
