Rack of Lamb with Dijon-Mustard Sauce

Ingredients
- 1 rack of lamb (3 pounds), all visible fat removed
- 1 cup finely chopped fresh parsley
- 1/2 cup Dijon mustard
- 1/2 cup soft whole wheat bread crumbs
- 1 tbsp. chopped fresh rosemary OR 2 tsp. dried rosemary
- 1 tsp. minced garlic
- Fresh rosemary, lemon slices, and lemon peel strips (optional)

Step 1
1. Preheat oven to 500.
2. Place lamb in large baking pan.
3. Combine parsley, mustard, bread crumbs, rosemary and garlic in small bowl. Spread evenly over the top of the lamb.
4. Place in center of oven and cook 7 minutes for medium-rare.
5. Turn oven off, but DO NOT OPEN DOOR for at least 30 minues,
5. Serve 2 to 3 chops on each plate, depending on size. Garnish with additional rosemary, lemon slices and lemon peel strips, if desired.
