Grilled Calamari (or Shrimp) and Sausage Salad

Ingredients
- 1/2 pound ground pork or sausage
- 2 large garlic cloves, minced
- 1/4 teaspoon sweet or smoked paprika
- 12 cleaned small (3-4 inch) squid bodies plus tentacles
- OR
- 12 jumbo shrimp
- 3 stalks celery, sliced
- 3-4 handfuls of arugula
- 3 tablespoons olive oil
- 1 tablespoons chopped parsley
- 2 tablespoons sherry vinegar
- 1 teaspoon fennel pollen or ground fennel seeds

Preparation
Step 1
1. Heat a skillet until hot and add pork in pieces with some oil if pork is lean. Let brown on high heat without stirring and then add garlic and spices, salt and pepper, and stir. Set aside when cooked.
Step 2
2. Prepare grill. Season squid and tentacles (or shrimp) with salt. Oil grill rack, then grill squid and shrimp on high until you have grill marks on one side, then turn and finish grilling on the second side.
About 5 minutes total for large shrimp and 7-9 minutes total for small calamari
Slice calamari tubes into 1/4"-1/2" rings

3. In a medium bowl, mix together sherry vinegar, olive oil, and fennel pollen

4. Add pork, calamari, celery, arugula, and parsley, and mix to coat.
Don't season the raw shrimp, just coat in olive oil. DONT put the olive oil on the grill (it will burn + become acrid). Season the shrimp AFTER grilling for best flavor.
