London Broil with Shiitake Mushrooms

  • 8 oz fresh Shiitake mushrooms
  • 1 lb London broil or flank steak
  • 2 T olive oil, divided
  • 1 tsp dried thyme
  • 3 cloves garlic, minced
  • 2 shallots, chopped
  • 2 C beef broth or dry red wine

Step 1

Preheat grill to medium-high 350-400 F. Remove stems from mushrooms and discard. Cut mushroom caps into thin slices; set aside. Brush steak with 1 tablespoon of the oil; rub with thyme, salt and pepper to taste. Grill steak, uncovered, 6 to 8 minutes per side or to desired doneness. Slice steak diagonally across the grain into thin slices.

Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat; add garlic and shallots; saute until tender. Add broth; bring to boiling. Reduce heat and simmer 10 minutes or until reduced by half. Add mushrooms and cook 5 minutes more or until tender, stirrring often. Serve with steak.
