Ingredients

  • 1 Qt Criminis, sliced thin
  • 1/4 c celery, minced
  • 1/4 c green pepper, minced
  • 16 oz chicken broth
  • 2 oz Sherry
  • 1 c light cream
  • 1 c milk
  • 1/2 c flour
  • 4 oz blue cheese
  • 1/4 c Buffalo wing sauce

Preparation

Step 1

Saute mushrooms, celery, & peppers in butter until soft. Add flour, stir and cook over low heat a few minutes. Add chicken broth, stirring to prevent lumps. Add crumbled blue cheese & stir until smooth. Add sherry, cream, & milk and simmer until warm. Stir in hot sauce and simmer a few minutes.
