Baked Penne with Meat Sauce

Ingredients
- 8 oz. dried whole wheat penne
- 1 14-oz. can whole Italian style tomatoes
- 1/2 of a 6-oz. can tomato paste
- 1/4 cup dry red wine
- 1/2 tsp. sugar
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. black pepper
- 1 lb. turkey Italian sausage
- 1/2 cup chopped onion
- 1/4 cup sliced black olives or more
- 1/2 cup shredded mozzarella

Preparation
Step 1
Preheat oven to 375°
1. Cook pasta according to directions.
2. In blender or food processor combine tomatoes thru black pepper and blend until smooth. Set aside.
3. In large skillet cook Italian sausage and onion until brown. Drain off grease. Stir in tomato mixture, cover, bring to a boil, and simmer for 10 minutes. Stir in pasta and olives (I used a lot more olives and saved some for the top)
4. Spoon mixture into 2 quart casserole, cover, and cook for 30 minutes. Uncover and top with mozzarella (I used a lot more) and I topped with more olives. Bake uncovered about 5 minutes more, or until cheese is melted.
