Mushroom Barley Pilaf

  • 1 C quick-cooking barley
  • 1 T olive oil
  • 1 C chopped onion
  • 1 (8 oz.) package of pre-sliced mushrooms (or fresh)
  • 2 cloves garlic, minced
  • 1/4 C dry sherry
  • salt
  • pepper

Preparation

Step 1

Cook 1 cup quick-cooking barley according to package directions, omitting salt and fat.

Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Add chopped onion and mushrooms, sauté about 4 minutes. Stir in garlic and sauté 1 minute.

Add sherry; cook until liquid almost evaporates.

Stir in barley; cook 2 minutes or until thoroughly heated. Season with salt and pepper to taste.
