Ingredients

  • 8 oz. dried penne
  • 1 14 oz. can whole Italian style tomatoes, undrained
  • 1/2 of a 6 oz. can Italian-style tomato paste
  • 1/4 C tomato juice
  • 1/2 t sugar
  • 1/2 t dried oregano
  • 1/3 t pepper
  • 1 lb. lean ground beef
  • 1/2 C chopped onion
  • 1/2 C shredded reduced-fat mozzarella cheese

Preparation

Step 1

Cook pasta according to directions. Drain, set aside.

Meanwhile, in a blender combine undrained tomatoes, tomato paste, juice, sugar, oregano and pepper. Blend until smooth. Set aside.

In a large skillet cook ground beef and onion over medium high heat until meat is brown. Stir in tomato mixture. Bring to boiling. Reduce heat. Simmer covered for 10 minutes. Stir in pasta, fresh oregano.

Bake, covered at 375 degrees for 30 minutes in a 2 quart casserole. Sprinkle with mozzarella cheese and bake 5 minutes more.
