Couscous Pilaf

Tomato-Feta Variation:
Prepare Couscous Pilaf; decrease salt to 1/8 teaspoon. Stire in 3/4 cup quartered grape tomatoes, 1/3 cup crumbled feta cheese, 1 tablespoon chopped basil, and 1 tablespoon lemon juice.

Ingredients
- 1 tablespoon olive oil
- 1/4 cup finely chopped shallots
- 1 cup uncooked couscous
- 1 cup plus 2 tablespoons chicken broth
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh flat leaft parsley (optional)
- 1 teaspoon chopped fresh thyme

Preparation
Step 1
Heat saucepan
add oil to pan and coat
add shallots and saute 1 minute
stir in couscous and saute 1 minute
add broth and salt, boil.
cover and remove from heat and let stand 5 minutes
fluff with fork.
stir in parsley and thyme.
