Ingredients

  • 2 shallots, finely chopped
  • 1 English cucumber, diced
  • 1 tomato, diced
  • 1 carrot, grated
  • 1 clove garlic, minced
  • 1/2 red or yellow bell pepper, diced
  • 1 1/2 cup s frozen corn kernels, thawed
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup chopped spinach
  • 1/2 cup light Italian vinaigrette
  • 1 tbs red wine vinegar
  • salt and pepper
  • 2 cups couscous
  • 2 cups boiling water

Preparation

Step 1

-combine shallots, cucumber, tomato, carrots, garlic, red pepper, corn, chickpeas, and spinach
-in vinaigrette combine vinegar, and salt/pepper
-place couscous in bowl and add boiling water, stir, cover until water absorbed
-add couscous to vegetables and refrigerate for 1 hour to 2 days
-serve cold
