Lamb Burgers
Ingredients
- 2 # ground lamb
- 2/3 cup finely chopped fresh mint
- 2/3 cup finely chopped parsley
- Zest of 1 lemon
- 2 T grated Vidalia onion
- 2 tsp. kosher salt
- plus freshly ground pepper
- plus olive oil, for brushing
- 1 red onion, thickly sliced
- ketchup
- Crumbled feta cheese

Preparation
Step 1
1. Combine lamb with mint, parsley, zest, onion, salt and 1 large pinch pepper in bowl. Mix gently until just combined. Divide mixture into 4 equal balls, flatten into patties, and make an indentation in center of each with your thumb. (Cover and refrigerate up to 1 day)
2. Brush burgers with oil on both sides. Grill over direct, medium heat, 10 to 15 min. total for med. rare
3. Brush red onion slices with oil and grill over direct, med.-high heat until softened and slightly charred, about 3 min., flipping once. Brush cut sides of rolls with oil; toast over direct, med. high heat about 1 min. until golden.
4. Assemble burgers: Spread tops of rolls with ketchup. Layer patties, onions, and feta on bottom halves, and sandwich with top halves.
