Ingredients

  • 2 tsp olive oil
  • 1 large onion chopped
  • 1 green bell pepper seeded and chopped
  • 2 garlic cloves, minced
  • 2 14.5 oz cans Italian-style stewed tomatoes
  • 1/2 lb skinless boneless chicken breast, cubed
  • 4 TBSPs dry red wine
  • 2 cups penne or ziti
  • 4 TBSPS grated Parmesan Cheese

Step 1

1. In a large nonstick skillet, heat the oil. Add the onion, pepper and garlic; cook, stirring as needed, until softened, about 5 minutes.

2. Add the tomatoes, chicken and wine; bring to a boil. reduce the heat and simmer, covered, until the chicken is cooked through, 5 - 6 minutes.

3. Meanwhile, cook the penne according to package directions. Drain and place in a serving bowl. Add the chicken mixture; toss to combine. Serve sprinkled with the cheese.
