Ingredients
- 2 tsp olive oil
- 1 large onion chopped
- 1 green bell pepper seeded and chopped
- 2 garlic cloves, minced
- 2 14.5 oz cans Italian-style stewed tomatoes
- 1/2 lb skinless boneless chicken breast, cubed
- 4 TBSPs dry red wine
- 2 cups penne or ziti
- 4 TBSPS grated Parmesan Cheese

Preparation
Step 1
1. In a large nonstick skillet, heat the oil. Add the onion, pepper and garlic; cook, stirring as needed, until softened, about 5 minutes.
2. Add the tomatoes, chicken and wine; bring to a boil. reduce the heat and simmer, covered, until the chicken is cooked through, 5 - 6 minutes.
3. Meanwhile, cook the penne according to package directions. Drain and place in a serving bowl. Add the chicken mixture; toss to combine. Serve sprinkled with the cheese.
