Baked Penne with Chicken

Ingredients

  • 4 tbsp olive oil
  • 2 bay leaves
  • 1 tbsp Italian seasoning
  • 2 tsp. chopped garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 lb. boneless skinless chicken cut into bite sized pieces
  • 1 chopped green bell pepper
  • 1 chopped small onion
  • 2 cups broccoli florets
  • 2 cups sliced fresh mushrooms
  • 2 tomatoes chopped
  • 1 lb. penne
  • 16 oz spaghetti jar
  • 1/2 cup shredded mozzarella

Step 1

Cost a 9 x 13 inch baking pan with cooking spray.

In a shallow glass dish, combine oil, bay leaves, italian seasoning, garlic, salt and pepper. Add chicken, cover and set aside for 10 minutes.

In a large skillet, saute chicken with marinade for 5 minutes or until chicken is well browned. Remove bay leaves. Add pepper, onion, broccoli, mushrooms and tomatoes. Simmer for about 5 minutes.

Cook penne in boiling water until al dente. Drain and return to pot. Add chicken vegetable mixture. Stir in spaghetti sauce. Pour mixture into baking pan. Top will mozzarella.

Bake at 350 for about 50 minutes.
