Ingredients

  • 2 oz. fresh Parmesan Cheese (1/2 cup grated)
  • 3 oz. reduced-fat cream cheese (Neufchatel)
  • 1/4 cup lightly packed fresh basil
  • 2 tablespoons Garlic & Herb Rub (Pampered Chef) or make your own
  • 6 slices uncooked turkey bacon
  • 1 tablespoon canola oil
  • 3 medium zucchini
  • 1- 15 oz. can cannellini beans, drained and rinsed
  • 2 oz. reduced-fat feta cheese, crumbled (1/2 cup)

Step 1

Grate Parmesan cheese. Place cream cheese in microwavable bowl and microwave uncovered on HIGH 15-20 seconds or until softened. Mix cream cheese, Parmesan, basil and rub together until basil is finely chopped and mixture is blended. Set aside.

Stack bacon slices and cut crosswise into 1/4 inch pieces. Place bacon in pan and cook over medium heat 7-8 minutes, stirring occasionally, until lightly browned.

Meanwhile, cut ends off zucchini and cut crosswise into 2 1/2 inch pieces. Spiral cut zucchini into large bowl.

Remove pan from heat with the bacon and add beans and cream cheese mixture, gently stirring until mixture begins to soften and combine. Add zucchini to ingredients from bacon pan into a microwaveable pan; cover. Pan will be very full...just press down on zucchini. It will cook down.)

Microwave, covered on HIGH 5-7 minutes or until zucchini on top just begins to wilt; zucchini will continue to soften and cook. Add feta to pan and stir until sauce begins to form and coats "zucchini pasta".

Serves 4.
