Ingredients

  • 1 LB Boneless skinless chicken, cut in bite size pieces
  • 2 talbespoons flour
  • 2 cups penne pasta un cooked
  • 2 tablespoons kraftsun-dried tomatoes dressing
  • 1 cup fat free chicken broth
  • 2 oz neufchatel cheese cubed
  • 1 package frozen spinach chopped thawed, well drained
  • 1 cup shredded mozzarella cheese
  • 2 tablespoon grated parmesan cheese

Preparation

Step 1

heat oven 375
toss chicken with flour
cook pasta
heat dressing in large skillet on medium heat
add chicken, cook and stir 3 minutes or just until chicken is browned
add broth and neufchatel cheese cook 3 min or until neufchatl is meted, stirring frequently
stir in spinach
drain pasta
add to spinach mixture
mix lightly
spoon half into 2 quart casserole
top with 1/2 cup mozzarella
repeat layer
sprinkle parmesan on top
bake 16 to 18 minutes or until casserole is heated through and mozzarella is melted
