Halloumi skewers with courgette and mushroom

Ingredients
- MARINADE:
- 750 g halloumi cheese
- 500 g baby courgettes
- 40 small chestnut mushrooms
- 20 bay leaves
- 20 small skewers (soaked in water if wooden)
- 4 tbsp Japanese soy
- 2 tbsp honey mustard
- 3 garlic cloves, crushed
- 100 ml chopped parsley
- 4 tbsp olive oil

Preparation
Step 1
Cut the halloumi into 40 cubes and slice the courgette into 40 slices.
Mix the marinade together and add mushrooms and courgette. Let marinade at least 1 hour.
Thread the skewers with cheese, bay leaves, mushrooms and courgettes. Grill on medium, 4-5 min per side.
