Halloumi skewers with courgette and mushroom

Ingredients

  • MARINADE:
  • 750 g halloumi cheese
  • 500 g baby courgettes
  • 40 small chestnut mushrooms
  • 20 bay leaves
  • 20 small skewers (soaked in water if wooden)
  • 4 tbsp Japanese soy
  • 2 tbsp honey mustard
  • 3 garlic cloves, crushed
  • 100 ml chopped parsley
  • 4 tbsp olive oil

Preparation

Step 1

Cut the halloumi into 40 cubes and slice the courgette into 40 slices.

Mix the marinade together and add mushrooms and courgette. Let marinade at least 1 hour.

Thread the skewers with cheese, bay leaves, mushrooms and courgettes. Grill on medium, 4-5 min per side.
