Garlic Chicken

The awesome sauce: Mix sauce ingredients & bring to boil
- The awesome sauce:
- 1 c. shoyu (soy sauce)
- 1 c. sugar
- 3/4 c. water
- 2 tsp. ginger, minced
- 4 Tbsp. garlic, minced
- 5 lbs. chicken thighs, cut to bite size pieces
- pepper and garlic salt to your preference and taste
- 1 c. flour
- 1/2 c. cornstarch
Taco Seasoned Chicken Enchilada

In a medium frying pan, heat oil
- 2 tsp. vegetable oil
- 1 medium onion, diced
- 2 large cloves garlic, minced
- 1 can (4 oz.) diced green chilies
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. taco seasoning
- 1 can (15.5 oz.) Mild Chili Beans In Chili Sauce
- 1 can (14.5 oz.) Diced Tomatoes with Taco Seasonings
- 1 cup frozen cut corn
- 8 (10 inch) flour tortillas
- 2 cups cooked shredded chicken
- 1 cup shredded mild cheddar cheese
Easy Baked Chicken Cacciatore

1. Heat oven to 400 degrees
- 3 or 4 boneless chicken breasts, cubed
- 2 T. olive oil
- 2 T. flour
- 1 1/4 tsp. salt, divided
- 1 tsp. dried oregano
- 1/2 tsp. ground black pepper
- 1 red bell pepper, cut in 1/2" wide strips
- 1 green bell pepper, cut in 1/2" wide strips
- 1 large onion, chopped
- 1 (12 oz.) package fresh mushrooms, sliced
- 1 (14.5 oz.) can Italian-style stewed tomatoes
- 1/3 c. dry white wine
- 1 T. chopped fresh parsley (optional)

- 1 cup butter
- 1 (8-ounce) package cream cheese

Glazed Spiced Pumpkin Bars

These Glazed Spiced Pumpkin Bars have the perfect combination of sweet and spicy
- 2 cups Fiber One® original bran cereal
- 1/2 cup canola or vegetable oil
- 1/2 cup orange juice
- 1 (15-ounce) can pumpkin (not pumpkin pie mix)
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup walnuts, chopped
- 1 cup powdered sugar
- 4 to 6 teaspoons orange juice
Lemon Raspberry Streusel Muffins

Mix yogurt, eggs, sugar and oil and then add the dry ingredients and stir until well mixed
- 6 oz lemon yogurt (I used Greek yogurt in this batch and it worked well - use whatever flavor you want!)
- 2 eggs
- 1/2 cup sugar
- 3/4 cup oil (I always substitute at least 1/2 of this amount with applesauce, sometimes all of it. If you replace all the oil with applesauce, it will make them more dense and a little chewy but they are still delicious)
- 2 cups flour (I often replace half of this amount with whole wheat flour)
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup fresh or frozen raspberries (I used a 6 oz container of fresh raspberries)
Black Bean and Veggie Enchiladas

1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 can (10 oz) green enchilada sauce
- 1 bag (14.4 oz) frozen pepper stir-fry (with sliced green, red & yellow peppers & white onions)
- 1 can (16 oz) refried black beans or traditional refried beans
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic salt
- 1 package (8.2 oz) flour tortillas for soft tacos & fajitas (6 inch)
- 1 1/2 cups shredded Monterey Jack cheese (6 oz)
Old-Fashioned Soft Pumpkin Cookies

In a bowl, mix flour, baking powder, baking soda, salt and spices; set aside
- 2-1/2 c. all-purpose flour
- 1 t. baking powder
- 1 t. baking soda
- 1/2 t. salt
- 1 t. cinnamon
- 1/2 t. nutmeg
- 1/2 c. plus 1 T. butter, softened
- 1-1/2 c. sugar
- 1 c. canned pumpkin
- 1 egg, beaten
- 2 t. vanilla extract, divided
- 1 T. maple syrup
- 2 c. powdered sugar
- 3 T. milk
- Optional: colored sugar, candy sprinkles

To make the cake: Preheat oven to 350 F
- White Cake
- 1 cup whole milk, at room temperature
- 6 large egg whites, at room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups (9 oz) cake flour
- 1 3/4 cups sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter, cut into 12 pieces – softened but still cool
- Strawberry and Blueberry Syrups
- 1 cup blueberries
- 3/4 cup water
- 2 tablespoons sugar
- 2 tablespoons berry blue gelatin
- 1 1/2 cups strawberries, hulled
