1 Rinse cod under cold water
- 1 lb. Boneless Salted Cod
- ¾ cup Extra Virgin Olive Oil, plus more for garnish
- 1 red onion, sliced into ¼” rings
- 2 tsp. Minced Garlic, or 4 cloves garlic, finely chopped
- ¼ cup Red Wine Vinegar
- GOYA® Adobo All-Purpose Seasoning, to taste
- 1 medium tomato, cut into 6 wedges
- 3 hard-boiled eggs, sliced
- 1 avocado, sliced
- 12 Manzanilla Olives stuffed with Minced Pimientos (optional), halved
- 1 tbsp. chopped cilantro
- 1 bag (32 oz.) GOYA® Tropical Vegetable Mix – Viandas Para Sancocho, cooked according to package
Seafood-Stuffed Plantain Cups Seafood

1 Heat oil in large, non-stick skillet over medium-high heat
- 1 tbsp. Extra Virgin Olive Oil
- 1 lb. medium shrimp, peeled and deveined (tails removed), about 41-50 pieces
- GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
- 1 can (8 oz.) Tomato Sauce
- 1 cup water
- 1 tbsp. GOYA® Sofrito
- 1½ tsp. Minced Garlic
- 1 packet Sazón GOYA® with Coriander and Annatto
- ¼ cup chopped fresh cilantro, cilantro
- 1 box (12 oz.) frozen GOYA® Fried Plantains Cups, heated according to package instructions
- GOYA® Vegetable Oil, for frying the plantain cups
Caramel Pecan French Toast

In small saucepan over medium heat, cook brown sugar, butter, and corn syrup until thickened, stirring constantly
- CARAMEL SAUCE:
- 1 cup brown sugar
- 1/2 cup (1 stick) butter
- 2 tablespoons light corn syrup
- 1 cup chopped pecans, divided
- 12 slices Italian-style or any hearty bread
- 6 eggs
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/4 cup (1/2 stick) butter
- 1 tablespoon light corn syrup
Black Bean Soup with Avocado Salsa

In 2-quart saucepan, mash beans slightly with potato masher
- 1 can (15 oz) black beans, drained, rinsed
- 1 cup water
- 1 can (14.5 oz) fire roasted diced tomatoes, undrained
- 1/2 cup chipotle salsa
- 1 teaspoon ground cumin
- 1 cup diced peeled avocado
- 1/2 teaspoon grated lime peel
- 1 tablespoon fresh lime juice
- 2 tablespoons finely chopped fresh cilantro
- 1/8 teaspoon salt
- Reduced-fat sour cream, if desired
Peppermint Pretzels

- 1 (11 ounces) package white chocolate chips
- 1 (10 ounces) package large pretzel sticks

Baked Smashed Potato Casserole

- 3 tablespoons butter
- 1/4 cup half and half
- Salt and pepper to taste

Heavenly Filled Strawberries

- 3 dozen large fresh strawberries
- 2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
- 1/2 cup confectioners' sugar

Spice Cookies with Pumpkin Dip

In a large bowl, cream butter and sugar until light and fluffy
- PUMPKIN DIP:
- 1-1/2 cups butter, softened
- 2 cup sugar
- 2 eggs
- 1/2 cup molasses
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground Cinnamon
- 1 teaspoon each ground ginger and cloves
- 1 teaspoon salt
- Additional sugar
- 1 package (8 ounces) cream cheese, softened
- 2 cups pumpkin pie filling
- 2 cups confectioners' sugar
- 1/2 to 1 teaspoon ground Cinnamon
- 1/4 to 1/2 teaspoon ground ginger
Taco Seasoning Mix

Measure all ingredients into a small ziploc baggie, makes 1 pkg of mix; which is enough to create 1 batch of Tacos)...
- 2 tablespoons Instant flour** (Wondra works great!)
- 2 teaspoons chili powder
- 1 1/2 teaspoons dried minced onion
- 1 1/4 teaspoons salt
- 1 teaspoon paprika
- 3/4 teaspoon crushed beef bouillon cube
- 1/4 teaspoon sugar
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- dash onion powder

Place potatoes in a soup pot and add enough water to cover
- 2 pounds red skinned potatoes, quartered
- 4 hard-boiled eggs, chopped
- 3 celery stalks, chopped
- 1/2 cup shredded Cheddar cheese
- 2 scallions, sliced
- 1/4 cup bacon bits
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
