Cold Sesame Noodles

Cook pasta according to package directions; drain and set aside
- 1 pound linguine or spaghetti
- 1 cup peanut butter
- 6 scallions (green onions), thinly sliced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 3 garlic cloves, minced
- 1 1/2 teaspoons white vinegar
- 2 tablespoons sesame oil
- 1/4 teaspoon ground red pepper
- 1/2 of a red pepper, cut into strips
Crunchy Baked Chicken

In a shallow bowl, whisk egg and milk
- 1 Egg
- 1 tablespoon milk
- 1 can (2.8 ounces) french-fried onions, crushed
- 3/4 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1 teaspoon paprika
- 1/2 teaspoon salt
- Dash pepper
- 1 broiler/fryer chicken (3 to 4 pounds), cut up
- 1/4 cup butter, melted
Firecracker Chicken

Preheat the oven to 325 degrees F
- For the sauce:
- 2-4 tablespoons canola oil
- 3-4 boneless, skinless chicken breasts (about 2 pounds)
- Salt and pepper
- 1 cup cornstarch
- 2 large eggs, beaten
- 1/3 cup hot sauce (I used Frank's)
- 1 cup packed light brown sugar
- 1 tablespoon water
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon salt
Heart Healthy Taco Casserole

Preheat oven to 400 degrees
- 1 lb Ground Skinless Chicken Breast
- 1/2 cup Chopped Onion
- 1/2 cup Chopped Bell Pepper
- 1 tsp Minced Garlic
- 1 1/4 oz pkg Low Sodium Taco Seasoning Mix
- 8 oz Taco Sauce
- 8 oz Light Sour Cream
- 1 cup Fat Free Cottage Cheese
- 1 cup Crushed Low Fat Tortilla Chips
- 1 cup Shredded Cheddar Cheese
Rice with Pigeon Peas-Arroz con Gandules

1. Heat olive oil in a 6-quart pot
- 1 tablespoon olive oil
- 1/2 cup sofrito
- 1/2 cup chopped ham (or cooked pork pieces)
- 2 cups rice
- 4 cups water
- 1 packet sazón
- 1 15-ounce can Pigeon Peas/Gandules (drained and rinsed)
Woolworth's Ice Box Cheese Torte #2

Pour milk into a small metal bowl; place mixer beaters in the bowl
- 1 can (12 ounces) evaporated milk
- 1 package (3 ounces) lemon gelatin
- 1 cup sugar
- 1-1/3 cups boiling water
- 1/4 cup lemon juice
- 1-3/4 cups graham cracker crumbs
- 5 tablespoons butter, melted
Appetizer Meatballs (BBQ-type sauce)

Combine all ingredients and bring to a boil
- 2 cups ketchup
- 1/2 cup water
- 1/2 cup white vinegar
- 1/2 cup honey
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dried minced onion
- 1/4 teaspoon pepper
- 1 dash garlic powder
- dash cayenne pepper
- 2 1/2 pounds fully cooked meatballs
Mom's Apple Cake

Preheat oven to 350 degrees
- 6 apples, Mom uses McIntosh apples (I used Jona Gold apples)
- 1 tablespoon cinnamon
- 5 tablespoons sugar
- 2 3/4 cups flour, sifted
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil (I used half applesuce and half oil)
- 2 cups sugar
- 1/4 cup orange juice ( I used apple juice cause I didn't have orange juice)
- 2 1/2 teaspoons vanilla
- 4 eggs
- 1 cup walnuts, chopped (optional)
