Directions Bring a large saucepan of salted water to a boil

- 1 1/2 cups semi-pearled farro, rinsed

- 1 cup grape tomatoes, halved
- 1/4 cup chopped fresh mint

- 2 cups baby arugula

- 1/2 vanilla bean, split open, scraped into pan
- 1 cup water
- 2-3 teaspoon arrowroot starch (or cornstarch)
