Chicken Normandy

In a large frying pan, heat the olive oil, over medium heat
- 4 chicken thighs, skin on
- 1/2 medium yellow onion, finely minced
- 1 garlic close, finely minced
- drizzle of olive oil
- hard apple cider, preferrabley from the normandy region
- handful of crimini mushrooms, cleaned and cut in half
- 1/4 cup heavy cream
- kosher salt to taste
- fresh cracked black pepper
- italian parsley, for garnish
Spicy Bacon Cowboy Chili Recipe

1. Heat a large sauce pan (preferably cast iron) over med-high heat
- 2 lbs Ground Beef, combination of top round and brisket is our favorite
- 6 strips (300g) Bacon, diced
- 1 lrg Sweet Onion, diced
- 4 cloves Garlic, crushed
- 1 -2 Habaneros, finely diced
- 1 c (237ml) BBQ Sauce
- 2 t (10g) Cayenne Pepper
- 2 t (10g) Chili Powder
- 2 t (10g) ground Cumin
- 2 T (30g) Paprika
- 2 T (30g) Brown Sugar
- 1 t (5g) fresh cracked Black Pepper
- 1/4 c (30g) Masa (corn flour), addition inspired by Pioneer Woman’s Chili Recipe
- 1 12 oz Beer
Sweet Potato Hash with Caramelized Onions, Sausage & Eggs

To make the hash: Heat the oven to 450°F
- To serve:
- 2 pounds onions, about 2 large
- 1 tablespoon unsalted butter
- Table salt
- 1 pound fresh Italian sausage or chorizo
- 3 pounds sweet potatoes, about 3 large potatoes, ideally organic
- 6 large garlic cloves
- 4 long stalks rosemary, about 1/4 cup of leaves
- 3 tablespoons olive oil
- 1 tablespoon kosher salt, plus more to taste if necessary
- Freshly ground black pepper
- Large eggs
- Kosher salt and freshly ground black pepper
- Parmesan cheese, to serve
Homemade American Cheese

1. Line bottom and sides of 5- by 4- by 4-inch pan with plastic wrap, letting sides overhang
- 1 tablespoon water
- 1 1/2 teaspoons gelatin powder
- 12 ounces Colby cheese, grated
- 1 tablespoon whole milk powder
- 1 teaspoon salt
- 1/8 teaspoon cream of tartar
- 1/2 cup plus 2 tablespoons whole milk
Homemade Biscuits Recipe

Adjust oven rack to lower-middle position and preheat to 400°F
- 9 ounces all-purpose flour, such as Gold Medal (about 2 cups, spooned; 255g)
- 1/2 ounce sugar (about 1 tablespoon; 15g)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons (6g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
- 4 ounces cold unsalted butter, cut into 1/2-inch cubes (about 8 tablespoons; 110g)
- 9 ounces plain yogurt, straight from the fridge (about 1 cup plus 2 tablespoons; 255g), see note
Garden Tomato Basil Soup

1. Add a few tablespoons of olive oil into a deep frying pan, and heat on high
- Ingredients:
- 6 ripe tomatoes – cut into chunks
- 3 carrots – peeled and sliced into discs
- 1 green or red bell pepper – cut into chunks
- 1 yellow onion – cut into chunks
- 5 cloves of garlic – halved
- 6-8 fresh basil leaves
- 2 cups chicken broth
- 2 tsp paprika
- Dash of dried thyme
- 1/2 tsp black pepper
- Salt to taste
- 1/2 cup milk
- Dab of butter

Broccolini And Chilli Spaghetti With Pangrattato

Preheat the oven to 180°C
- 4 slices sourdough bread
- 2 tbs olive oil
- 3 garlic cloves, finely chopped
- 1 cup flat-leaf parsley, roughly chopped
- 500 g spaghetti
- 2 bunches broccolini, trimmed, halved
- 1 long red chilli, deseeded, finely chopped
- Grated zest of 2 lemons, plus wedges
- 1 cup (80g) grated parmesan
Cheesy Panade with Swiss Chard, Beans & Sausage

Heat the oven to 350°F. Slice the bread into cubes roughly 1-inch in size
- 1 16-ounce loaf crusty country bread
- 1 onion, diced
- 1 12-ounce bunch swiss chard, stems removed and chopped, leaves ribboned
- 2 links chicken sausage, diced
- 2 cloves garlic, minced
- 1 teaspoon dry thyme (or 1 1/2 teaspoons fresh)
- 3 cups (2 16-ounce cans) cranberry, navy, or white beans
- 2 cups (8 ounces) shredded mozzarella
- 6 cups chicken stock
Garlicky Pot Roast with Roasted Potatoes & Root Vegetables
