Cook pasta according to package instructions
- 13 oz box whole grain penne (brown rice, whole wheat, quinoa, whatever you like)

1. Bring a large pot of generously salted water to a boil
- 1 pound spaghetti
- 2-3 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- ¼ tsp crushed red pepper flakes (or more depending on how spicy you want it)
- ½ cup vodka
- 1 1/2 cups ricotta cheese
- Zest of 2 lemons, 1 lemon juiced
- Chopped fresh parsley and basil
- Handful of flat-leaf parsley, chopped
- Freshly grated Parmigiano- Reggiano or Pecorino Romano cheese
Baked Oysters With Wild Mushroom Ragout

Buy the oysters. When buying oysters, look for a tag with the harvest date and use them within a week of that date

- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup quinoa flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 6 tablespoons unsalted butter, room temperature
- 3/4 cup sugar
- 1/4 cup plain, whole milk yogurt, room temperature
- 2 room temperature eggs
- 2 1/2 ripe bananas, lightly mashed
