WHITE CHOCOLATE LEMON TRUFFLES

Melt chocolate, butter and cream over a double boiler or in a microwave
- 1 cup white chocolate
- 5 Tbsp. unsalted butter
- 3 Tbsp. heavy cream
- pinch salt
- 1 tsp. lemon extract
- icing sugar, for dusting
Herbed Shrimp and White Bean Salad

- 4 teaspoons sherry vinegar
- 4 teaspoons extra-virgin olive oil
- 1 tablespoon chopped fresh thyme
- 2 teaspoons minced fresh garlic
- 1 teaspoon chopped fresh rosemary
- 1/2 teaspoon black pepper
- 2 cups loosely packed arugula
- 1 cup trimmed watercress
- 1 cup grape tomatoes, halved
- 1/4 cup chopped fresh flat-leaf parsley
- 1 (15.5-ounce) can Great Northern beans, rinsed and drained
- 1 tablespoon honey
- 1 teaspoon water
- 24 peeled and deveined medium shrimp (about 1 pound)
- Cooking spray
- 1/4 teaspoon salt
Chocolate Orange Fondue

- 1/3 cup heavy cream
- 1 1/2 teaspoons grated orange zest
- 1/2 teaspoon instant coffee granules
- 2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
Lazy Day Crock Pot Lasagna

This is our lazy day crock pot lasagna recipe
- 1 bag of frozen cheese ravioli (25 oz)
- 1 lb of ground beef, browned
- 3 cans of crushed tomatoes (14 or 15 oz each)
- 1 tablespoon of Italian Seasoning
- 1 tablespoon of Garlic Salt
- 4 cups of mozzarella cheese
- 1/4 cup parmesan cheese (optional)
Spinach and Cannellini Bean Dip

- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 2 (6-ounce) bags baby spinach
- 1 (15-ounce) can cannelloni beans, drained and rinsed
- 1 tablespoon fresh lemon juice
- 1 tablespoon balsamic vinegar
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Warm Cannellini Beans with Feta and Rosemary

In a saucepan heat the beans with some of their liquid, add the tomatoes and warm through
- 2 cups cooked cannellini beans, with some of their cooking liquid, preferred, or 1 (15 1/2 ounce)can cannellini beans, partially drained (do not rinse)
- 1 - 2 ripe tomatoes, seeded and diced, (optional)
- 1/4 - 1/4 cup crumbled feta cheese
- 1 teaspoon finely minced fresh rosemary, or to taste
- 2 tablespoons COLAVITA Extra Virgin Olive Oil
- Salt and freshly ground pepper, to taste

- 2 1/2 cups all-purpose flour
- 1 1/2 cups good cocoa powder
- 2 1/4 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 3 extra-large eggs, at room temperature
- 3 teaspoons pure vanilla extract
- 1 1/2 cups buttermilk, at room temperature
- 3/4 cup sour cream, at room temperature
- 3 tablespoons brewed coffee
- 1 recipe Orange Buttercream, recipe follows
Honey-and-Lemon-Marinated Chicken

Preheat the oven to 400 degrees Line a baking sheet with foil
- Juice and zest of 1 large lemon (3 tablespoons juice)
- 3 tablespoons honey
- 2 teaspoons finely chopped garlic
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 cup plus 2 tablespoons extra-virgin olive oil
- 4 bone-in chicken breast halves, skin on (about 2-1/4 pounds)
- Salt and freshly ground pepper
Chicken Salad & Rice A Roni

Boil chicken and cut into bite sized pieces
- Make a day ahead
- 5 chicken breasts
- 1 box Rice A Roni - chicken flavor
- 1 bunch green onion
- 3/4 can sliced black olives
- 2 jars marinated artichokes (save oil)
- 1/2 cup mayonnaise
Mexicasserole

- 1 pound of chicken, poached and shredded
- 2 cups restaurant style tortilla chips, crushed
- 1 can red kidney beans, rinsed well and drained
- 1 can black beans, rinsed well and drained
- 1 can of corn, drained
- 8 oz. can of tomato sauce
- 1 cup salsa
- 1 teaspoon salt
- 1/2 cup red onion, chopped
- 1 red or green pepper cut into 1/4 inch dice
- 1/4 cup chopped cilantro
- 1 clove of garlic, minced
- 12 – 16 oz. grated cheddar
- Diced tomatoes to garnish
