Grilled Halibut with Watermelon Salsa

Fresh flavors abound with this simply grilled halibut served with homemade watermelon salsa
- HALIBUT:
- 1 pound skin-on halibut fillet
- 1 1/2 tablespoons olive oil
- Kosher salt and freshly ground black pepper to taste
- WATERMELON SALSA:
- 2 cups chopped, seedless watermelon
- 2 Thai chiles, or 1 serrano pepper, finely minced
- 1/4 cup finely chopped red onion, about 1/2 small
- 1 medium clove garlic, minced, about 1 teaspoon
- 1/4 cup chopped fresh cilantro leaves
- 1 tablespoon fresh juice from 1 lime
Crock Pot Chicken Taco Chili

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker
- 1 onion, chopped
- 1 16-oz can black beans
- 1 16-oz can kidney beans
- 1 8-oz can tomato sauce
- 10 oz package frozen corn kernels
- 2 14.5-oz cans diced tomatoes w/chilies
- 1 packet taco seasoning
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz (3-4) boneless skinless chicken breasts
- chili peppers, chopped (optional)
- 1/4 cup chopped fresh cilantro
Turkey-and-Pinto-Bean Chili

In a large Dutch oven, heat 1 tablespoon of the oil until shimmering
- 1/4 cup extra-virgin olive oil
- 3 pounds ground turkey
- 1 medium onion, cut into 1/2-inch dice
- 3 garlic cloves, minced
- 1 1/2 tablespoons chile powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 3/4 teaspoon chipotle powder
- 1 large carrot, cut into 1/4-inch dice
- 1 red bell pepper, cut into 1/2-inch dice
- One 28-ounce can tomato puree
- Three 15-ounce cans pinto beans, drained
- 3/4 cup lager
- 1 cup chicken stock or low-sodium broth
- 1 tablespoon cider vinegar
- 1 teaspoon chopped thyme
- Salt and freshly ground black pepper
- Chopped chives, for garnish

- 2 (1 pound) sweet potatoes, quartered
- 1 large tart apple, peeled and cored
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 stalks celery, chopped
- 1 large carrot, chopped
- 1 bay leaf
- 5 cups chicken broth
- 1 cup cream
- 1 (5 ounce) lemon, zested and juiced
- salt and pepper to taste
- 1 cup crumbled goat cheese or feta cheese
Crockpot BBQ Meat Loaf

In large bowl, combine all ingredients except potatoes thoroughly
- 2 pounds ground beef
- 1/2 cup oats
- 1/2 cup bread crumbs
- 1/2 cup milk
- 1/2 cup bottled barbecue sauce
