Breaded Pork Tenderloin

Using sharp knife, cut tenderloin lengthwise almost in half, being careful not to cut all the way through
- 1 pork tenderloin (12 oz. ) trimmed
- 1 large egg
- 2 Tbsp Water
- 1/2 tsp salt
- 1/4 tsp dried rosemary, crumbled (use mortar & pestle)
- 3/4 cup plain dried bread crumbs
- 3 Tbsp. vegetable oil (use olive oil)
Broccoli Salad

Trim off the large leaves from the broccoli stem
- 1 Head Broccoli
- 6-8 slices Bacon Crumbled
- 1/2 cup chopped Red Onion
- 1/2 cup Raisins
- 8 oz. Sharp Cheddar Cheese cut into very small chunks
- 1 cup Mayonnaise
- 2 Tbsp White Vinegar
- 1/4 cup Sugar
- 1/2 cup halved Cherry tomatoes
- Salt and freshly Ground Pepper
Baked Salmon Filets

Salmon: Preheat oven to 400F
- 4 pieces salmon fillet with skin (6 oz. each)
- 1 teaspoon olive oil
- 1/8 tsp. salt
- 1/8 tsp. ground black pepper
- Salmoriglio Sauce
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 garlic clove, crushed with side of chef's knife
- 1 tsp dried oregano, crumbled
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/3 cup extra virgin olive oil

- 1 medium zucchini, sliced
- 1 cup sliced fresh mushrooms
- 1 small onion, chopped
- 1 can (14 1/2oz) no-salt added diced tomatoes.
- 1 cup water
- 1 cup reduced sodium chicken broth
- 1 tsp. fresh basil
- 1/4 tsp. pepper

- 1 Tbsp Olive Oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, chopped
- 1/2 lb. ground turkey (pref dark meat)
- 2 Tbsp. Tomato Paste
- 1 tsp. ground cumin
- 1/2 tsp. ground chipotle chili pepper or 2 tsp. chili powder
- 1 (28oz) can diced tomatoes
- 2 (15oz) cans kidney beans, rinsed
- Kosher Salt and black pepper
- 1/4 cup reduced-fat sour cream
- Cilantro sprigs, for serving
Salsa - Tomato with heavy Cilantro Flavor

Mix all ingredients. pour into mason jar and refrigerate
- 1 large lime - grate 1 tsp rind, 2 Tbsp. juice
- 1 1/2 lbs. ripe tomatoes (3 large) chopped
- 1/2 small red onion - finely chopped
- 1 small jalapeno - cored & seeded - minced
- 2 Tbsp chopped fresh cilantro
- 3/4 tsp salt
- 1/4 tsp black pepper
- *I added 1 Tbsp minced garlic and more salt to taste.

Slice the French Bread into about 1/2" thick slices and place them on a baking sheet

Chicken Parmigiano

This is a healthy recipe, but doesn't taste healthy
- 4 boneless, skinless chicken breasts, pounded thin
- Nonstick olive oil spray
- Salt and ground black pepper
- 2 cups low-fat marinara sauce (couldn't find. Used Emeril's marinara)
- 1 cup drained canned whole plum tomatoes, roughly chopped (rather than use fresh basil, I bought plum tomatoes with basil mixed in)
- 1 cup roughly chopped fresh basil leaves (I omitted)
- 1 cup reduced-fat mozzarella
- 6 Tbsp of grated Parmigiano-Reggiano cheese
- 1/2 cup whole-wheat bread crumbs
Mom's Chicken Salsa

Cut Chicken into pieces. Season with salt and pepper
- 3 whole chicken breasts cut up into small pieces. Diced.
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp butter
- 1 medium onion sliced thin or diced
- 3/4 cup salsa
- 1 cup dairy sour cream
- 1 cup grated cheddar
- 1 cup grated Monterrey Jack
- Long Grain White rice
Spinach and Artichoke Dip

Boil spinach and artichoke hearts in one cup of water over medium heat until tender
- 1 cup artichoke hearts (non-marinated)
- 1 box frozen chopped spinach (thawed)
- 8 oz. cream cheese
- 1/2 cup grated parmesan cheese
- 3/4 tsp. crushed red pepper flakes
- 1/4 . tsp salt
- 1/8 . tsp garlick powder
- dash black pepper
