  • Make the lemon curd:
  • makes one two-layer, 8" cake
  • Lemon curd
  • 1/2 cup lemon juice (fresh)
  • 1/2 cup plus 2 Tablespoons sugar
  • 1 stick unsalted butter
  • 2 large eggs
  • 1 . Boil the lemon juice, sugar, and butter in a medium sauce pan
  • 2 . Whisk the eggs together in a large bowl
  • 3 . Pour 1/2 a cup of the lemon mixture into the eggs and whisk together. Add the egg mixture back into the pan with the lemon juice
  • Cover and Cool in the refrigerator until ready to assemble cake.
  • Cake
  • 2 1/2 cups cake flour, (measure, then sift)
  • 1 1/4 cup sugar
  • 1 tablespoon plus 1teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 1/2 sticks unsalted butter (room temp)
  • 1 tablespoon canola oil
  • 1 cup milk
  • 1 1/2 teaspoons vanilla
  • 5 large egg whites
  • 16 oz. sweetened coconut flakes
