Coconut Lemon Curd Cake

- Make the lemon curd:
- makes one two-layer, 8" cake
- Lemon curd
- 1/2 cup lemon juice (fresh)
- 1/2 cup plus 2 Tablespoons sugar
- 1 stick unsalted butter
- 2 large eggs
- 1 . Boil the lemon juice, sugar, and butter in a medium sauce pan
- 2 . Whisk the eggs together in a large bowl
- 3 . Pour 1/2 a cup of the lemon mixture into the eggs and whisk together. Add the egg mixture back into the pan with the lemon juice
- Cover and Cool in the refrigerator until ready to assemble cake.
- Cake
- 2 1/2 cups cake flour, (measure, then sift)
- 1 1/4 cup sugar
- 1 tablespoon plus 1teaspoon baking powder
- 3/4 teaspoon salt
- 1 1/2 sticks unsalted butter (room temp)
- 1 tablespoon canola oil
- 1 cup milk
- 1 1/2 teaspoons vanilla
- 5 large egg whites
- 16 oz. sweetened coconut flakes
Oreo Truffles

MIX cream cheese and 3 cups cookie crumbs until well blended
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1 pkg. (1 lb. 2 oz.) OREO Cookies, finely crushed (about 4-1/4 cups), divided
- 2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted

- Yield: About 60 cookies, 2 inches in diameter

Carrot Bread With Hazelnuts, Coconut and Cream Cheese Glaze

Make the carrot bread: Preheat the oven to 350 degrees F
- For the Bread:
- 1 stick unsalted butter, melted and cooled (or 1/2 cup vegetable oil), plus more for the pan
- 1 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 3/4 cup hazelnuts, toasted and chopped
- 1 cup sweetened shredded coconut
- 2 large eggs
- 1/2 cup plain yogurt or sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon zest (optional)
- 1 cup shredded carrots
- For the Glaze:
- 1 cup confectioners' sugar
- 3 tablespoons cream cheese, softened
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
Huggy Buggy Bread Pudding

Preheat the oven to 350 degrees F
- 3 * 3 tablespoons melted butter
- 3 * 3 eggs
- 1 * 1 cup sugar
- 1 * 1 (14-ounce) can coconut milk (not low-fat)
- 3 * 3 cups whole milk
- 1/4 * 1/4 teaspoon ground cinnamon
- 1/4 * 1/4 teaspoon ground cardamom
- 1/4 * 1/4 teaspoon ground ginger
- * Pinch salt
- 1 * 1 baguette, cut into 1-inch chunks (about 7 cups)
- 6 * 6 dried figs, soaked in hot water for at least 15 minutes, thinly sliced*
- * Handful roasted unsalted cashew nuts, whole or chopped
- * Vanilla ice cream, for serving

These are a decadent cookie inspired by a Good Morning America Christmas cookie contest winner many years back
- Cream the following:
- 13 oz jar Nutella
- 1 C butter, softened
- 3 T sweetened condensed milk
- 3/4 C white sugar
- 1/2 C brown sugar
- 1 T vanilla
- Add 2 eggs once fluffy and mix until smooth
- Then add and mix well:
- 1 C malted milk powder
- 1/4 t salt
- 1/2 t baking soda
- 2 3/4 C flour
- Fold in:
- 2 cups chocolate chips
