Four-Cheese Macaroni and Cheese

1. Heat oven to 375°. Bring a 4-qt

- 8 oz. hollow pasta, preferably
- elbow macaroni or shells
- 3 slices crustless white bread
- 6 tbsp. unsalted butter
- 1/2 tsp. paprika
- 3 sprigs fresh thyme
- 2 shallots, minced
- 1 bay leaf
- 1/4 cup flour
- 1/8 tsp. cayenne pepper
- 3 cups milk
- 10 oz. grated sharp white cheddar
- (about 4 cups)
- 10 oz. grated Gruyère (about 4 cups)
- 6 oz. Velveeta, cut into 1/2" cubes
- (about 1 1/4 cups)
- 1 oz. blue cheese, crumbled (about 1/4 cup)

- 3 ⁄4 cup dried bread crumbs, preferably panko
- 1 oz. finely grated Parmesan (about 1 cup)
- 1 ⁄4 cup flour
- 3 1⁄2 cups milk
- 4 oz. grated Gruyère (about 1 1⁄2 cups)
- 4 oz. grated Comté or Cantal (about 1 1⁄2 cups)
- 4 oz. grated fontina (about 1 1⁄2 cups)
- Freshly ground black pepper, to taste
Cocktail Meatballs

1. Preheat the broiler. In a large bowl, soak the bread in the milk for 1 minute, until softened
- 5 slices of packaged white sandwich bread
- 1 cup milk
- 3 large eggs, beaten
- 1 small white onion, minced
- 1 tablespoon salt
- 2 teaspoons sweet paprika
- 1 teaspoon dry mustard
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground mace
- 2 pounds lean ground beef
- Vegetable oil, for brushing
- 1 cup ketchup
- 1/2 cup currant jelly

One-Skillet Pasta

In a large skillet, cook the turkey, onion and pepper over medium heat until meat is no longer pink; drain
- 1-1/2 pounds ground turkey
- 1 medium onion, finely chopped
- 1 medium sweet red pepper, finely chopped
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
- 1 can (14-1/2 ounces) reduced-sodium beef broth
- 1 can (4 ounces) sliced mushrooms
- 1 tablespoon packed brown sugar
- 1 tablespoon chili powder
- 8 ounces uncooked angel hair pasta

Pasta Carbonara with Corn and Chiles

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente

- 1 lb. egg tagliatelle or egg fettuccine pasta
- 3 tbsp. EVOO
- 1/4 –1/3 lb. pancetta, finely diced
- 4 ears corn, kernels scraped from the cob, or 1 1/2 to 2 cups thawed frozen corn kernels
- 2 small fresno or italian cherry chile peppers, seeded and finely chopped
- 6 cloves garlic, finely chopped
- 2 tbsp. chopped fresh thyme
- 1/2 cup finely chopped flat-leaf parsley
- 1/2 cup dry white wine
- 3 extra-large organic egg yolks, beaten (reserve the egg whites for baking or breakfasts)
- 1/2 cup each grated (nutty) parmigiano-reggiano and (tangy) pecorino-romano cheese
- A handful chives, snipped into 1-inch pieces
Blueberry-Vanilla Cream Cheese Pies

Thaw 3 sheets of puff pastry overnight in the refrigerator
- Two 17.3-oz. packages frozen puff pastry
- 3 oz. cream cheese, softened
- 7 Tbs. granulated sugar
- Seeds scraped from 1/2 vanilla bean (or 1/2 tsp. pure vanilla extract)
- 2 large egg yolks
- 1 cup blueberries
- 2 tsp. cornstarch
- 2 tsp. crème de cassis
- 1/8 tsp. kosher salt
- Confectioners’ sugar for finishing
