Rava Dosas

Indian Crepes with potato chickpea masala
- For Masala Filling:
- 1 1/2 lb. Yukon potatoes
- 1/3 cup dried grated unsweetened
- coconut
- 2 tsp. cumin seeds
- 1 (3-in.) piece jalapeno, coarsely
- chopped, including seeds
- 1 (2 1/2-in.) piece ginger, coarsely
- chopped
- 3 garlic cloves, smashed
- 1 Tbsp. curry powder
- 1/2 tsp. cinnamon
- 1/2 tsp. tumeric
- 1/3 cup veg. oil
- 1 3/4 cups water, divided
- 1 large onion, chopped (3 cups)
- 1 (15-19 oz.) can chickpeas, rinsed
- and drained
- 1/2 cup frozen peas (do not thaw)
- 1/2 cup chopped cilantro
- For Rava Dosas:
- 1/2 cup semolina flour
- 1/2 cup rice flour
- 1/2 cup all-purpose flour
- 1/2 tsp. cumin seeds
- 1/2 tsp. salt
- 2 cups water
- Veg. oil for brushing

- 2 garlic cloves, very thinly sliced
- 3 large scallions, very thinly sliced
- 1/2 cup fresh sheep-milk ricotta cheese
- 2 large eggs
- 2 teaspoons finely grated lemon zest
- Kosher salt and freshly ground pepper
- 3/4 cup all-purpose flour
- Olive oil, for frying
- Lemon wedges, for serving
Peanut Dipping Sauce

In med. bowl, whisk together peanut butter and water until smooth
- 1/2 cup natural creamy peanut butter
- 1/2 cup warm water
- 1/4 cup fresh lime juice (from 2 limes)
- 1 Tbs. soy sauce
- 4 tsps. sugar
- 1/4 cup chopped peanuts
Farmhouse Chicken Chowder

1. Cook bacon in Dutch oven over medium heat until crisp, about 8 minutes
- 6 slices bacon, chopped
- 6 scallions, white parts chopped fine and green parts sliced thin
- 2 carrots, peeled and sliced thin
- 1 celery rib, sliced thin
- Salt and pepper
- 6 tablespoons all-purpose flour
- 5 cups low-sodium chicken broth
- 1 pound red potatoes, scrubbed and cut into 1/2-inch pieces
- 1 rotisserie chicken , skin discarded, meat shredded into bite-size pieces (about 3 cups)
- 1 cup half-and-half
Creamed Chicken with Gnocchi Dumplings

1. Cook gnocchi according to package directions, drain
- One 1-lb. package potato gnocchi
- 4 Tbs. butter
- 1 onion, finely chopped
- 1 red bell pepper, chopped
- 12 ounces skinless, boneless chicken breast, cut into thin strips

- 2 Tbs. flour
- 1 cup half-and-half
- 1 cup chicken broth
- 2 scallions, chopped

- 1 3/4 cups plus 8 tablespoons sugar, divided
- 1 1/4 cups fresh orange juice
- 1 1/2 teaspoons ground cardamom
- 12 ounces shelled pistachios, toasted (scant 3 cups)
- 2 teaspoons ground cinnamon
- 1 cup (2 sticks) unsalted butter, melted
- 30 14x9-inch sheets fresh phyllo pastry or frozen, thawed (from one 16-ounce package)

- 1 packet stir-fry seasoning powder
- 1/4 cup water
- 2 Tbs. soy sauce
- 2 Tbs. lime juice
- 1 tsp. sugar
- 1 Tbs. canola oil
- 1 lb. ground chicken breast
- 1 red bell pepper, diced
- 1/4 cup dice water chestnuts
- 2 Tbs. scallions, thinly sliced
- Pinch red pepper flakes
- 1 head romaine lettuce (inner leaves only), or 2 heads of butter lettuce and/or radicchio
- For garnish: mint, cilantro, bean sprouts, chopped peanuts
