- 1 Tbs. chili powder
- 1/3 cup chopped drained pickled jalapeno chilis
- 3/4 cup shredded cheddar cheese + more for garnish

Spicy Peanut Noodles

Chinese noodles with peanut butter
- 1 lb. spaghetti
- 3/4 cup smooth peanut butter
- 1/2 cup unseasoned rice vinegar
- 3 Tbs. plus 1 tsp. sugar
- 6 Tbs. soy sauce
- 1/4 cup water
- 1 Tbs. toasted sesame oil
- 2 tsps. crushed red pepper
- One 2-inch piece ginger; coarsely chopped
- 1 large garlic clove
- 3 celery ribs, thinly sliced
- 1/2 cup coarsely chopped cilantro
- lime wedges for serving

1. Preheat oven to 400. Coat a 2-quart oval or rectangular baking dish with nonstick spray
- 1 1/2 lb. ground turkey
- 4 Tbs. canola oil, divided
- 1 cup each of diced onion, carrot and celery
- 1 Tbs. each minced garlic and thyme
- 3 Tbs. all-purpose flour
- 2 Tbs. tomato paste
- 1 can diced tomatoes, drained (14.5 oz.)
- 1 cup low-sodium chicken broth
- 1/2 cup dry red wine
- 1 Tbs. worcestershire sauce
- 2 tsp. Dijon mustard
- 1 cup frozen green peas
- Salt and Pepper to taste
- 8 cups frozen hash brown potatoes
- 4 Tbs. unsalted butter
- 1 cup shredded white cheddar

- Meatballs:
- 1 large onion, chopped fine
- 1 large green bell pepper, chopped
