Steak and Mushroom Kabobs

Cut steak into pieces about 1 1/2 inches square
- Marinade:
- 14-16 oz. Top Sirloin, New York Steak, or Petite Sirloin (use steak with less than 10% fat for South Beach Diet)
- 8 oz white mushrooms, washed and dried
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 T Worcestershire Sauce
- 1/2 tsp. Vege-Sal or salt
- 1/2 tsp. fresh ground black pepper
- 1 tsp. garlic powder
Kansas City Steak Soup

"This delicious soup is quite famous locally
- 1 pound sirloin steak
- 1 cup red wine
- 1 cup olive oil
- 1 cup butter
- 1 cup all-purpose flour
- 8 cups beef broth
- 1/4 tablespoon ground black pepper
- 1 large carrot, diced
- 1 onion, chopped
- 1 stalk celery, diced
- 1 can green beans drained
- 16 ounces stewed tomatoes
- 2 tablespoons butter
Marinated Carrots

1. Cook carrots till just tender 2
- 2 lbs Carrots, sliced in rounds
- 1 small onion, thinly sliced
- 1 can Tomato Soup
- 1/2 cup vegetable oil
- 3/4 cup cider vinegar
- 1 cup sugar
- 1 tsp yellow mustard
- 1 tsp Worcestershire
- salt and pepper to taste
NO-BAKE Energy Bites

- 1 cup (dry) oatmeal (I used old-fashioned oats)
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax seed
- 1/2 cup chocolate chips or cacao nibs (optional)
- 1/3 cup honey or agave nectar
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
Tuna Salad

- 1 can of Tuna
- 1 celery stalk
- 1 small apple
- 2 green onions
- 2 TBS Mayo
- 1 TBS Dijon Mustard
- 1 TBS capers, rinsed and drained
- 2 ripe tomatoes
Cranberry, Feta and Walnut Salad

- Ingredients:
- 2 cups mixed salad greens (I use leaf lettuce, endive and radiccio)
- 1 cup dried sweetened cranberries
- 4 ounces crumbled feta cheese
- 1/2 cup walnut pieces, toasted
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon ground black pepper
- 1/4 cup extra virgin olive oil
Chicken Pot Pie

1. Preheat oven to 425 degrees F (220 degrees C)
- 1 recipe pastry for a 9 inch double crust pie
- 1 carrot, chopped
- 1 head fresh broccoli, chopped
- 2 boneless chicken breast halves, cooked and chopped
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2/3 cup milk
- 1 cup shredded Cheddar cheese
- 1/2 teaspoon salt
Low Carb Chocolate Mousse

Microwave Apple Almond Dessert

- 2/3 About 2/3 cup chopped apple (70 grams)
- Sugar-free syrup, such as Da Vinci's caramel, or water and sugar substitute
- About half a teaspoon of cinnamon
- 3 About 3 Tablespoons almond meal
- About a teaspoon of butter
- Chopped walnuts or pecans (optional)
Golden Beet Soup

Golden beets have orangey skin and a more delicate sweetness than red beets
- 6 tablespoons (3/4 stick) pareve margarine
- 9 2 1/2-inch-diameter golden beets, peeled, cut into 1/2-inch cubes (8 to 9 cups), green tops reserved
- 4 1/2 cups chopped onions
- 4 teaspoons minced peeled fresh ginger
- 1 tablespoon finely grated lemon peel
- 6 cups (or more) low-salt chicken broth
- 2 to 3 tablespoons fresh lemon juice
