Green Chile Turkey Taco Salad with Peppers and Avocado

- Turkey Mixture Ingredients:
- 1 1/2 lb. lean ground turkey (I used ground turkey thighs)
- 2 tsp. olive oil
- 1 1/2 cup green chile salsa (for Paleo diet or Whole 30, choose salsa without added sugar)
- 1/4 cup fresh-squeezed lime juice (I used my fresh-frozen lime juice)
- 1 T ground cumin
- 1 can (4 oz.) diced green chiles (Anaheim chiles, not jalapenos unless you really want it spicy)
- salt and fresh ground black pepper to taste
- Dressing Ingredients:
- 1/4 cup green chile salsa (for Paleo diet or Whole 30, choose salsa without added sugar)
- 1/2 cup finely chopped fresh cilantro (or use sliced green onion if you're not a cilantro fan)
- 2 T fresh-squeezed lime juice (I used my fresh-frozen lime juice)
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 cup olive oil (or use another neutral-flavored oil of your choice, such as avocado oil)
- Salad Ingredients:
- 6 heads baby romaine lettuce (or about 3-4 regular heads romaine)
- 1 green bell pepper
- 1 red bell pepper
- 1/2 small Poblano pepper, finely chopped
- 1/2 bunch chopped cilantro (optional but recommended, use sliced green onion if you're not a cilantro fan)
- 2 avocados
- 1 T fresh-squeezed lime juice (I used my fresh-frozen lime juice)
Better-than-Mom's Chicken, Broccoli, and Quinoa Casserole with Creamy Curry Sauce

Preheat oven to 350F/180C
- 1/2 cup quinoa (rinsed unless the package says it does not need rinsing)
- 1 cup water for cooking quinoa (or a little more, see recipe)
- 3 cups broccoli flowerets, cut into same-sized pieces
- 1/2 tsp. salt (for cooking broccoli)
- 2 cups diced cooked chicken (I used leftover rotisserie chicken)
- 1 1/4 cup low-fat sour cream
- 1/3 cup mayo or light mayo
- 2 T fresh-squeezed lemon juice
- 1 tsp. Dijon mustard
- 1 tsp. curry powder (I used Penzey's Sweet Curry Powder)
- salt and fresh ground pepper to taste to season the sauce (I used Vege-Sal.)
- 1/3 cup coarsely grated Parmesan cheese.
Roast Pork Loin With Golden Almond Crust

Preheat oven to 350 degrees
- For the Dijon mustard sauce:
- 1 (4-pound) boneless pork loin roast
- Salt and freshly ground pepper
- 2 tablespoons Dijon mustard
- 2 cloves garlic, peeled
- 1 cup fresh bread crumbs
- 1/2 cup slivered almonds
- 1/4 cup chopped fresh Italian parsley
- 1 teaspoon herbes de Provence
- 4 cups low-sodium chicken broth
- 2 tablespoons Dijon mustard, or more to taste
- 1/4 cup ( 1/2 stick) unsalted butter, cut into small pieces

- 1 medium Spanish onion, chopped
- 2 stalks celery (with leaves), chopped
- 3 medium carrots, chopped
- 1/2 cup plus 1 tablespoon flour
- 7 cups chicken broth, homemade or low-sodium canned
- 3 sprigs parsley
- 3 sprigs fresh thyme
- 1 bay leaf
- 2 3/4 cups cooked, diced chicken
- 1/2 cup heavy cream
- 2 1/2 teaspoons dry sherry
- 1 tablespoon kosher salt
- Freshly ground black pepper to taste

- 1 box Jiffy Yellow Cake mix

- 1/3 cup milk
- 1/3 cup water

Hamburger Kabobs

Great change to just grilling ground beef
- 1 pound hamburger
- 1/2 cup coarsely chopped pine nuts (Recipe says any nuts except peanuts can be used.)
- 1 medium onion, chopped fine
- 1/2 cup chopped parsley
- 1 egg
- 1 tsp. salt (I used Vege-sal)
- 1 tsp pepper (or less, I used coarse ground)
- 1 tsp. dried oregano
- Vinaigrette dressing for basting kebabs (I prefer balsamic)
Navy Bean Soup

Great soup with a hot spicy bite
- 3 cans of canned navy beans
- 4 Cups Chicken or Vegetable Broth
- 2 Cups Water
- 1 Cup Milk
- 2 Chopped Celery Stalks
- 2 Minced Garlic Cloves
- 3 Sliced Carrots
- 1 Large yellow onion (chopped)
- 1/4 Cup chopped Fresh Parsley
- 1/2 teaspoon Black Pepper
- 2 Tablespoons Olive Oil
- 1 teaspoon Cayenne Pepper
- 1 1/2 pounds Smoked Ham (1/2" thick) cut into small cubes
- 1 10 ounce can of tomato soup

- 3/4 cup brown sugar, firmly packed
- 3/4 cup oats
- 3/4 cup chopped walnuts
- 2 TBS flour
- 1/4 tsp cinnamon
- 6 TBS butter
