Pork Stir Fry

Slice pork across grain into 1/8" strips
- 1 lb. lean boneless pork
- 1 tbsp. vinegar
- 1 clove garlic, minced
- 1 tbsp. cooking oil
- 1 tbsp. chicken broth or water
- 1 tbsp. each chopped dried appricots and walnuts
- 1 tbsp. soy sauce
- 1 tbsp. sesame oil
- 1/2 tsp. dry ginger
- 1 (10 oz.) pkg. stir fry vegetables
Grilled Calamari & Olive Salad

Preheat grill. Lightly score one side of each calamari body in a crosshatch pattern with the tip of a sharp knife
- 1 pound calamari, trimmed and cleaned (see Note)
- 2 1/2 tablespoons extra-virgin olive oil, divided
- Salt & coarsely ground pepper, to taste
- 1 pound new potatoes, scrubbed, quartered if large
- 1 pound asparagus, ends trimmed
- 2 red bell peppers, seeded and sliced into thin strips
- 1 red onion, thinly sliced
- 1/3 cup black olives, pitted and coarsely chopped
- 1/3 cup small green olives, pitted and coarsely chopped
- 1/4 cup balsamic vinegar
- 1/4 cup coarsely chopped fresh basil, plus more to taste
- 2 cloves garlic, finely chopped
- 1 teaspoon crushed red pepper, or to taste
Grilled Chicken and Pineapple Sandwich

1 Combine chicken and enough teriyaki sauce to cover it in a resealable plastic bag
- 4 boneless, skinless chicken breasts (4 to 6 oz each)
- 4 pineapple slices (1/2-inch thick)
- 1/4 cup pickled jalapeno slices, or 1 fresh jalapeno, thinly sliced
- Teriyaki sauce
- 4 slices Swiss cheese
- 4 whole-wheat kaiser rolls
- 1/2 medium red onion, thinly sliced
Tilapia With Peppers and Olives

1. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat
- 2 tablespoons olive oil
- 4 6-ounce tilapia fillets
- kosher salt and black pepper
- 2 red bell peppers, thinly sliced
- 1 onion, thinly sliced
- 1/2 cup pitted green olives
- 1/2 cup fresh flat-leaf parsley, chopped
- 2 tablespoons fresh lime juice
Pistachio Biscotti

Preheat the oven to 350 degrees F
- 1 1/2 cups pistachios
- 1/2 cup (1 stick) unsalted butter
- 3 eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Ravioli with Apples and Walnuts

1. Cook the ravioli according to the package directions
- 1 pound cheese ravioli (fresh or frozen)
- 2 tablespoons olive oil
- 1/2 cup walnuts, roughly chopped
- 1 crisp apple (such as Braeburn or Gala), cut into matchsticks
- 1/2 cup fresh flat-leaf parsley, chopped
- kosher salt and black pepper
- 1/4 cup grated Parmesan (1 ounce)
