Mexican Fiesta Salad Pizza

Preheat oven to 375˚F. Unroll crescent dough; separate into 16 triangles
- 2 pkg. (8 oz each) refrigerated crescent rolls
- 1 1/4 lb 93% lean ground turkey
- 1 1/4 cups medium thick and chunky salsa
- 1 pkg. taco seasoning mix
- 1 clove garlic, pressed
- 1 cup sour cream
- 2 cups thinly sliced iceberg lettuce
- 2 plum tomatoes, seeded and diced
- 2 green onions with tops, thinly sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup pitted ripe olives, coarsely chopped
- Additional salsa (optional)
2-Step Inside-Out Chicken Pot Pie

Cook the chicken in a 10-inch non-stick skillet over medium-high heat until well browned, stirring often
- 4 skinless, boneless Chicken breast halves (about 1 lb), cut into 1-inch pieces
- 1 can condensed cream of chicken soup
- 1 bag (16 oz.) frozen vegetable combination (broccoli, cauliflower, carrots, etc.)

Baked Bean Bonanza

Put all ingredients in the Crockpot and cook on LOW for 5-6 hours or HIGH for 2-3 hours
- 1 can pork and beans
- 1 can lima beans
- 1 can garbanzo beans
- 1 can kidney beans
- 1/2 lb ground beef, cooked and crumbled
- 1/2 lb bacon, slightly cooked
- 1/2 cup ketchup
- 2 tsp. mustard
- 1 1/2 Tbsp. vinegar
- 2 tsp. salt
- 3/4 cup brown sugar
- 1 cup chili sauce
- 1 onion, diced
Bean and Vegetable Burritos

- 2 Tbsp. chili powder
- 2 tsp. oregano
- 1-1 1/2 tsp. cumin
- 1 large sweet or regular potato
- 1 can black beans or pinto beans, rinsed and drained
- 4 cloves garlic, minced
- 1 medium onion, halved and thinly sliced
- 1 jalapeño pepper, seeded and minced
- 1 green pepper, chopped
- 1 cup frozen corn, thawed and drained
- 3 Tbsp. lime juice
- 1 Tbsp. cilantro
- 3/4 cup shredded cheese

Mom’s Favorite Coconut Cake

Cake: Bake in 3 (8-inch) greased and floured pans at 350˚ for 20-25 minutes
- Cake:
- 1 cup butter
- 2 cups sugar
- 1 tsp. vanilla
- 3 eggs
- 3/4 tsp. soda (stir in buttermilk)
- 1 cup buttermilk
- 2 1/2 cups sifted all-purpose flour
- Filling:
- 2 cups sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1 cup coconut milk
- -Minute Frosting:
- 1 large egg white
- 1 cup sugar
- 3 large marshmallows (or 6-7 miniature)
- 2 Tbsp. white corn syrup
- 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 1/3 cup boiling water
Chicken Breast with Swiss Cheese & Mushrooms

Preheat oven to 350˚. Place chicken breast halves in 9x13 baking dish
- 6 boneless, skinless chicken breast halves
- 1 cup shredded Swiss cheese
- 1/2 lb. fresh mushrooms, sliced
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 3/4 cup seasoned (herb) stuffing mix
- 1/2 cup melted butter
Chicken Lasagna

Combine first 10 ingredients in a large bowl and stir well
- 2 cans (10 1/2 oz.) condensed reduced-fat cream of chicken soup
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained, and squeezed
- 1 pkg. (9 oz.) frozen diced, cooked chicken
- 1 ctn. (8 oz.) reduced-fat sour cream
- 1 cup low-fat milk
- 1/2 cup (2 oz.) Parmesan cheese
- 1/3 cup chopped onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 9 uncooked lasagna noodles
- Cooking spray
- 1 cup shredded part-skim mozzarella
Chocolate Mint Dessert

Heat oven to 350˚. Grease 13x9x2-inch baking pan
- Mint Cream Center:
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup (1 stick) butter or margarine, softened
- 4 eggs
- 1 1/2 cups Hershey’s Syrup
- 2 cups powdered sugar
- 1/2 cup (1 stick) butter or margarine, softened
- 2 Tbsp. green crème de menthe (or 1 Tbsp. water plus 1/2 - 3/4 tsp. mint extract and 3 drops green food color
- Combine all ingredients in medium bowl; beat until smooth
- Chocolate Glaze:
- 6 Tbsp. butter or margarine
- 1 cup Hershey’s Semi-Sweet Chocolate Chips
- Melt ingredients in a small saucepan over very low heat. Remove from heat; stir until smooth. Cool slightly.
Cornbread Muffins

Mix all ingredients until smooth and pour into muffin pan, filling cups to about ⅔ full

- 3/4 cup cornmeal
- 7/8 cup milk
- 1/4 cup oil
- 1 large egg
- 2 Tbsp. sugar
