Chicken Hash

In a deep 12-inch skillet bring broth or water to a boil and add chicken breasts in one layer
- 4 cups chicken broth or water
- 2 whole skinless boneless chicken breasts (about 1 1/2 pounds), halved
- 1 1/2 pounds small red potatoes
- 1 large onion, chopped fine
- 1 small green bell pepper, cut into 1/4-inch dice (about 1/2 cup)
- 1 small red bell pepper, cut into 1/4-inch dice (about 1/2 cup)
- 3 garlic cloves, minced
- 2 tablespoons unsalted butter
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1/2 teaspoon dried thyme, crumbled
- 1/2 teaspoon salt
- 1/2 cup chopped scallion, white and pale green parts only
- 1/2 cup packed fresh parsley leaves, washed, spun dry, and chopped
- 1 cup half-and-half
Creamed Spinach with Bacon

1 Cut off the thick stems of the spinach and discard
- 1 pound fresh spinach, about 2 large bunches
- 3 to 4 strips of bacon, uncooked, finely chopped
- 1 clove garlic, finely chopped
- 1 medium onion, finely chopped
- A pinch of nutmeg
- Salt and pepper to taste
- 2 Tbsp butter
- 2 Tbsp flour
- 1 cup whole milk
Pepper Pot Soup

Place the tripe or other meat that you have selected to use in a saucepan, and cover with water
- 1 pound honeycomb tripe
- 5 slices bacon, diced
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 3 leeks, chopped
- 1 bunch fresh parsley, chopped
- 2 green bell peppers, diced
- 2 quarts beef stock
- 1/4 teaspoon dried thyme
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon ground cloves (optional)
- 1/4 teaspoon crushed red pepper flakes
- 1 bay leaf
- 1 teaspoon ground black pepper
- 1 large potato, peeled and diced
- 2 large carrots, diced
- 4 tablespoons margarine
- 4 tablespoons all-purpose flour
Oyster Stew

Melt the butter in a large skillet over medium heat, and cook the celery and shallots until shallots are tender
- 1/2 cup butter
- 1 cup minced celery
- 3 tablespoons minced shallots
- 1 quart half-and-half cream
- 2 (12 ounce) containers fresh shucked oysters, undrained
- salt and ground black pepper to taste
- 1 pinch cayenne pepper, or to taste
Sesame Crusted Seared Ahi

The difficulty with serving Ahi seared is how much cooking is too much? It’s a split second from silky to tough
- 1 Ahi Steak about 3/4″ thick
- 1 tablespoon of olive oil
- 1 tablespoon of white sesame seeds
- 1 tablespoon of black sesame seeds (poppyseeds can also be substituted so long as you don’t have an upcoming drug test!)
- 1 tablespoon of mustard seeds (optional)
- 1/2 teaspoon of kosher salt
- 1/4 teaspoon freshly ground black pepper
- Wasabi Aioli
- 1 cup good quality commercial or homemade mayonnaise or Vegenaise
- 1/2 teaspoon wasabi powder mixed with 2 teaspoons water (or to taste)
- 1 teaspoon lime juice
- 1 tablespoon chopped chives or scallions
- 1 teaspoon black sesame seeds
Outback Steakhouse Bloomin' Onion

- 2 teaspoons cumin seeds
- 1 teaspoon mustard seeds
- 4 dried chilies (crushed)
- 6 cups onions (sliced)
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1/4 cup lemon juice (or white vinegar)
- 1/4 cup sugar
Shrimp Potstickers

Finely chop 1 tablespoon cilantro leaves
- 2 tablespoons cilantro leaves
- 1/2 pound large shrimp, shelled and deveined
- 1 large egg white
- 1 1/2 teaspoons chile oil, or 1 1/2 teaspoons olive oil mixed with a pinch of cayenne
- 1 1/2 teaspoons sesame oil
- 2 teaspoons low-sodium soy sauce
- 1 medium carrot, grated
- 3/4 cup finely chopped (about 2 ounces) Napa cabbage
- 1/2 teaspoon freshly grated ginger
- 2 small scallions, finely chopped
- 1 tablespoon minced (about 1 small) shallot
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 package 3-inch round Chinese dumpling wrappers, available at large supermarkets
- 3 tablespoons vegetable oil
- 1/4 cup low-sodium soy sauce
