1. In a spice grinder or small food processor combine all the ingredients
- 1 * 1 tablespoon Celery Seed
- 1 * 1 tablespoon Black Peppercorns
- 6 * 6 Bay Leaves
- 1/2 * 1/2 teaspoon Whole Cardamom
- 1/2 * 1/2 teaspoon Mustard Seed
- 4 * 4 Whole Cloves
- 1 * 1 teaspoon Sweet Hungarian Paprika
- 1/4 * 1/4 teaspoon Mace
Pesto Sauce

Instructions: Put all the ingredients in a food processor fitted with the metal blade
- Ingredients:
- 1 cup packed fresh basil leaves
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup extra-virgin olive oil
- 1/3 cup shelled pine nuts
- 2 medium garlic cloves, peeled
Hot and Sour Soup

# Heat 2 tbsp. vegetable oil in a heavy pot over medium heat
- 2 * 2 tbsp. vegetable oil
- 1 * 1 med. onion, sliced
- 3 * 3 carrots, thinly sliced
- 3 * 3 cloves minced garlic
- 1 * 1 tbsp. fresh ginger, minced
- 4 * 4 c. chicken broth
- 1 * 1 c. water
- 2 * 2 tbsp. soy sauce
- 6 * 6 oz. shiitake mushrooms
- 1/3 * 1/3 c. sliced water chestnuts
- 1/2 * 1/2 lb. sliced snow peas
- 1 * 1 c. fresh bean sprouts
- 1/4 * 1/4 c. rice-wine vinegar
- 2 * 2 tbsp. sesame oil
- * Dash of chili oil
Buffalo Chicken Salad

Preheat a large skillet over medium-high heat
- 4 chicken breasts, cut into strips
- 1/4 cup flour
- Salt and pepper
- 3 African devil chilies
- 1/4 cup oil
- 1 batch Spicy Chicken Sauce (recipe follows)
- 1 head of romaine lettuce, washed and sliced
- 2 ribs celery, washed and chopped
- Juice of 1 lemon
- 8 ounces blue cheese, crumbled
- 1/4 cup butter, softened
- 1/2 cup Franks hot sauce
- 1/4 cup ketchup

1. Dissolve yeast in warm water in 2 1/2-quart bowl
- Creamy Glaze:
- 2 * 2 (1/4 ounce) packages yeast
- 1/4 * 1/4 cup water (105-115 degrees)
- 1 1/2 * 1 1/2 cups lukewarm milk (scalded, then cooled)
- 1/2 * 1/2 cup sugar
- 1 * 1 teaspoon salt
- 2 * 2 eggs
- 1/3 * 1/3 cup shortening
- 5 * 5 cups all-purpose flour
- * canola oil
- 1/3 * 1/3 cup butter
- 2 * 2 cups powdered sugar
- 1 1/2 * 1 1/2 teaspoons vanilla
- 4-6 * 4-6 tablespoons hot water
- Chocolate frosting:
- 1/3 * 1/3 cup butter
- 2 * 2 cups powdered sugar
- 1 1/2 * 1 1/2 teaspoons vanilla
- 4-6 * 4-6 tablespoons hot water
- 4 * 4 ounces milk chocolate chips or semi-sweet chocolate chips
Braised Artichokes with Horseradish Butter Sauce

Cut off stems of artichokes
- Braised Artichokes with Horseradish Butter Sauce
- Serves 2
- 2 large artichokes
- A bit of lemon juice
- 2 cloves garlic, minced
- 5 tablespoons butter
- 1 tbsp horseradish
- 1 cup cooking stock (vegetable, chicken, or whatever floats your boat)
- 1/2 tsp salt
- 1 tbsp stoneground mustard

1. In a medium bowl, combine mint, 2 tbsp
- 1 tbsp. dried mint
- 5 tbsp. extra-virgin olive oil,
- plus more for frying
- 2 tbsp. dried oregano
- 1 ⁄4 tsp. ground cinnamon
- 1 ⁄4 tsp. freshly ground nutmeg
- 1 ⁄8 tsp. cayenne pepper
- 1 medium red onion, grated
- 1 large egg and 1 yolk, beaten
- Kosher salt and freshly ground
- black pepper, to taste
- 1 cup milk
- 3 1⁄2"-thick slices stale country bread,
- crusts removed
- 1 lb. ground beef, pork, or lamb
- 1 ⁄2 cup flour, for dredging

Tilapia Nachos

I bought frozen Tilapia fillets and just followed the package direction for baking them
- 4 Tilapia fillets
- juice of 2 limes
- 40 – 50 large tortilla chips
- 2 cans black beans
- 3 tsp crushed garlic
- 3 tbs cilantro
- 1 tsp salt
- 3 shallots
- olive oil for frying
- flour for coating the shallots
- Queso Fresco
- raspberry poblano sauce (or any spicy sweet sauce you can find, Central Market has a ton of them)
Caprese Bruschetta

I use a fresh baguette from the store and have them slice the bread for me
