Carrot Cake: Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven

  • Cream Cheese Frosting:
  • 1 cup (100 grams) pecans or walnuts, toasted and coarsely chopped
  • 3/4 pound (340 grams) raw carrots (about 2 1/2 cups finely grated)
  • 2 cups (280 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 4 large eggs
  • 1 1/2 cups (300 grams) granulated white sugar
  • 1 cup (240 ml) safflower, vegetable or canola oil
  • 2 teaspoons pure vanilla extract
  • Note: For a moister carrot cake, add 1/2 cup of crushed pineapple (well drained) or applesauce to the batter when you add the oil and vanilla extract. You may have to bake the cake a few minutes longe
  • Note: This cake can be baked in a 9 x 13 x 2 inch (23 x 33 x 5 cm) pan. Just increase the baking time to between 30 to 40 minutes
  • 1/4 cup (57 grams) unsalted butter, room temperature
  • 8 ounces (227 grams) cream cheese, room temperature
  • 2 cups (230 grams) confectioners (powdered or icing) sugar, sifted
  • 1 teaspoon (4 grams) pure vanilla extract
  • finely grated lemon zest of one lemon
  • Garnish: (Optional)
  • 1 cup (100 grams) toasted and finely chopped walnuts or pecans

Dissolve the yeast in the workbowl of a stand mixer fitted with the dough hook attachment, let stand until frothy

  • For the Pecan filling:
  • 1 Envelope Active Dry Yeast
  • 2 Tbsp Warm Water (115 degree F)
  • 1 tsp Iodized Salt
  • 2 Tbsp Granulated Sugar
  • 1/4 Cup Milk
  • 2 tsp Orange Zest, minced
  • 2 Cups All Purpose Flour, sifted
  • 1 tsp Cinnamon
  • 2 Eggs, beaten
  • 1 1/4 sticks cold Unslated Butter, cut into very small dice
  • 1 Egg beaten and 2 Tbsp water, for the eggwash
  • 1 plastic baby trinket
  • 1 Cup Pecan halves, broken up slightly and roasted until fragrant
  • 2/3 Cup Brown Sugar
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1/2 tsp Ground Allspice
  • 1 pinch of salt
  • 4 Tbsp Steen’s Cane Syrup
  • Combine all of the ingredients together.
  • For the glaze
  • 1/2 Cup Powdered Sugar
  • 1 Tbsp Bourbon
  • Water (enough to make a paste that can be drizzled)
  • Combine the sugar and bourbon, whisk in enough water to make a glaze that can be drizzled.
