Carrot Cake

Carrot Cake: Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven
- Cream Cheese Frosting:
- 1 cup (100 grams) pecans or walnuts, toasted and coarsely chopped
- 3/4 pound (340 grams) raw carrots (about 2 1/2 cups finely grated)
- 2 cups (280 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 4 large eggs
- 1 1/2 cups (300 grams) granulated white sugar
- 1 cup (240 ml) safflower, vegetable or canola oil
- 2 teaspoons pure vanilla extract
- Note: For a moister carrot cake, add 1/2 cup of crushed pineapple (well drained) or applesauce to the batter when you add the oil and vanilla extract. You may have to bake the cake a few minutes longe
- Note: This cake can be baked in a 9 x 13 x 2 inch (23 x 33 x 5 cm) pan. Just increase the baking time to between 30 to 40 minutes
- 1/4 cup (57 grams) unsalted butter, room temperature
- 8 ounces (227 grams) cream cheese, room temperature
- 2 cups (230 grams) confectioners (powdered or icing) sugar, sifted
- 1 teaspoon (4 grams) pure vanilla extract
- finely grated lemon zest of one lemon
- Garnish: (Optional)
- 1 cup (100 grams) toasted and finely chopped walnuts or pecans

Simple Wonton Noodle Soup

Cook the egg noodles as per package directions and set aside
- Simple Wonton Noodle Soup
- 120 grams egg noodles
- 4 cups chicken stock
- 1 thumb-sized piece of ginger, peeled and sliced
- 1 red onion sliced
- 10-12 pcs wonton
- 1-2 bunches bok choy, trimmed and leaves separated
- 1 bunch enoki mushrooms, bottom trimmed and separated
- A splash or 2 of soy sauce
- 6 stalks green onion, sliced on the diagonal
Candy Apples

Line a large baking sheet with foil, and coat with cooking spray
- Cooking spray
- 8 (4-ounce) Red Delicious apples, stemmed
- 1 cup sugar
- 1/3 cup light-colored corn syrup
- 1/3 cup water
- 1/3 cup cinnamon decorator candies (such as Red Hots)

1. Prepare Hollandaise: Whisk together all ingredients except butter in small saucepan
- For Eggs Norwegian:
- 4 eggs
- 4 cups baby spinach leaves
- smoked salmon
- 2 english muffins
- 1 Tbsp white vinegar
- For Hollandaise Sauce:
- 2 egg yolks
- 1.5 tbsp fresh lemon juice
- 1 tbsp white wine vinegar
- 1/2 tsp light brown sugar
- 3 oz. unsalted butter

- 1 14-ounce can sweetened condensed milk
- 2/3 cup dark corn syrup
- 1/3 cup pure maple syrup
- 1/2 teaspoons vanilla extract
- 1 teaspoon robust-flavored (dark) molasses
- 1/4 teaspoon salt
- 12 sturdy lollipop sticks or chopsticks
- 12 medium apples
- Assorted decorations (such as chopped nuts, chopped raisins, mini M&M's and candy sprinkles)
- Equipment needed - one accurate candy thermometer.
King Cake

Dissolve the yeast in the workbowl of a stand mixer fitted with the dough hook attachment, let stand until frothy
- For the Pecan filling:
- 1 Envelope Active Dry Yeast
- 2 Tbsp Warm Water (115 degree F)
- 1 tsp Iodized Salt
- 2 Tbsp Granulated Sugar
- 1/4 Cup Milk
- 2 tsp Orange Zest, minced
- 2 Cups All Purpose Flour, sifted
- 1 tsp Cinnamon
- 2 Eggs, beaten
- 1 1/4 sticks cold Unslated Butter, cut into very small dice
- 1 Egg beaten and 2 Tbsp water, for the eggwash
- 1 plastic baby trinket
- 1 Cup Pecan halves, broken up slightly and roasted until fragrant
- 2/3 Cup Brown Sugar
- 1 tsp Vanilla extract
- 1 tsp Cinnamon
- 1/2 tsp Ground Allspice
- 1 pinch of salt
- 4 Tbsp Steen’s Cane Syrup
- Combine all of the ingredients together.
- For the glaze
- 1/2 Cup Powdered Sugar
- 1 Tbsp Bourbon
- Water (enough to make a paste that can be drizzled)
- Combine the sugar and bourbon, whisk in enough water to make a glaze that can be drizzled.
