1. Cook the seafood: Preheat the oven to 350F
- Seafood mixture:
- 3 king crab legs

- 12 ounces scallops
- 12 ounces shrimp, peeled, deveined, tails removed

- Béchamel:
- 6 tablespoons butter
- 2 teaspoons chopped garlic
- 6 tablespoons flour
- 4 cups milk
- 1 ounce (1/2 cup) grated parmesan cheese
- salt
- freshly ground white pepper
- Cheese mixture:
- 10 oz frozen spinach, thawed and squeezed of excess water
- 15 ounces part-skim ricotta cheese
- 1 egg
- 1 ounce (1/2 cup) grated parmesan cheese
- salt
- freshly ground white pepper
- 8 ounces grated Mozzarella cheese
- 8 ounces lasagna noodles, cooked and drained
Eggnog Ice Cream

- 1 * 1 cup whole milk
- 1/4 * 1/4 teaspoon salt
- 7 * 7 large egg yolks
- 3/4 * 3/4 cup sugar
- 2 * 2 cups chilled heavy cream
- 3 * 3 tablespoons dark rum
- 1 * 1 teaspoon vanilla
- 1/4 * 1/4 teaspoon freshly grated nutmeg
- * Special equipment: an instant-read thermometer; an ice cream maker
- * Garnish: freshly grated nutmeg
Coney Island Chili Dog

Boil Beefn Hot Dogs. always use Nathan's hotdogs Brown ground beef in a skillet, adding onions half way through
- 1 pound ground chuck
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 six ounce can tomato paste
- 1 cup water
- 1 tablespoon sugar
- 1 tablespoon prepared yellow mustard
- 1 tablespoon dried, minced onion
- 2 teaspoons chili powder
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon celery seed
- 1/2 teaspoon ground cumin (heaping)
- 1/4 teaspoon ground black pepper
Benedict Steak and Chipotle

Directions: For the eggs: In a large pot of boiling water add the vinegar
- Ingredients
- 8 eggs
- 1 tablespoon white vinegar
- 4 English muffins, toasted
- 8 thin slices leftover steak, to fit on each side of the English muffin
- spinach, leftover cooked, and warmed, a spoonful for each side of the English muffin
- Hollandaise sauce
- 3 egg yolks
- 6 ounces butter, melted
- 1 teaspoon fresh squeezed lime juice
- salt to taste
- 1 tablespoon sauce from a can of chipotles in adobo
Guacamole

Halve and pit the avocados and scoop the flesh into a bowl
- 2 * 2 ripe avocados (preferably California)
- 1 * 1 small onion, minced
- 1 * 1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
- 4 * 4 teaspoons fresh lime juice, or to taste
- 1/2 * 1/2 teaspoon ground cumin
- 1 * 1 fresh or pickled jalapeño chili if desired, seeded and minced (wear rubber gloves)
- 3 * 3 tablespoons chopped fresh coriander if desired
