Asian Barbecued Duck

Prick the ducks all over with a fork
- 2 Ducks (5 lb each)
- 6 oz Plum Jam
- 1 c Papaya Juice
- 1/2 c Rice Wine Vinegar
- 1/4 c Soy Sauce
- 2 Inches Ginger
- 4 tb Basil
- 4 Cloves Garlic, Chopped
- 1/2 Onion, Chopped
- 1 Jalapeno Pepper, seeded
Grilled Mushroom Swiss Burgers

Prepare a grill for medium heat
- 1 1/2 pounds lean ground beef
- 1/2 teaspoon seasoned meat tenderizer
- salt and pepper to taste
- 2 teaspoons butter
- 2 (4 ounce) cans sliced mushrooms, drained
- 2 tablespoons soy sauce
- 4 slices Swiss cheese
- 6 hamburger buns
Crab Quesadillas

Directions: 1. Cook the crab in boiling water for about 3 minutes
- Ingredients:
- 1/4 pound crab meat (thawed)
- 1 lime (juice and zest)
- 1 jalapeno (chopped)
- 1 green onion (chopped)
- 1 handful cilantro (chopped)
- 1 teaspoon cumin (toasted and ground)
- salt and pepper to taste
- 2 flour tortillas
- a touch of butter (or oil)
- 2 handfuls cheese such as cheddar or jack, etc. (grated)
Jumbo Stuffed Shrimp

Remove legs, and shell except shell on tail
- 1 1/2 lbs shrimp (use U-12 raw green shrimp. 12 to a pound).
- 1 1/2 cups fresh white breadcrumbs (take couple slices soft white bread and put in food processor)
- 1 tablespoon dried oregano.
- 3 cloves crushed garlic
- 1/4 cup chopped parsley
- salt & pepper to taste
- 1 can crabmeat, shredded
- 1/4 cup melted butter
