Pumpkin - Pecan Cookies with Brown Butter Frosting

Heat oven to 325 degrees. Line baking sheets with parchment paper
- 2 C flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 1 C sugar
- 1 C canned pure pumpkin
- 1/2 C oil
- 1 tsp canilla
- 1/2 C chopped pecans toasted*
- Frosting 1/4 C butter
- 1 C powdered sugar
- 1 to 2 TBS milk
- 1/2 tsp vanilla
- 1/4 C chopped pecans toasted*
Hot Honey Shrimp Skewers

This piquant honey marinade becomes the barbecue baste once the shrimp go on the grill
- 1/2 C wildflower honey
- 2 TBS oil
- 3 TBS frozen cranberry juice concentrate thawed
- 2 tsp crushed red pepper
- 1/2 tsp salt
- Dash nutmeg
- 1 1/2 lbs shelled uncooked large shrimp (16-20 per lbs)
- 4 ears corn cut crosswise into 1 inch peices
- 2 re bell peppers cut into 1 1/2 inch pieces
Sweet and Spicy Ginger Cookies

Crystallized ginger and cayenne pepper add a spicy kick to these soft and chewy giner cookies
- 2 C flour
- 1 TBS ground ginger
- 2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1 C packed dark brown sugar
- 3/4 C oil
- 1/3 C molasses
- 1 egg
- 1/4 - 1/2 tsp cayenne pepper
- 3/4 C chopped crystallized ginger

Hash Brown Casserole

In a bowl conbine the soup sour cream flour and garlic salt
- 1 can (15 oz) creamy potato soup
- 1 C (8 oz) sour cream
- 1 TB flour
- 1/2 tsp garlic salt
- 1 pkg (24 oz) frozen hash brown potatoes
- 2 C (8 0z) shredded cheddar cheese
- 1/3 C grated Parmesan cheese

Seafood Lasagna

In a large skillet saute onion in oil and 2 TBS butter until tender
- 1 green onion finely chopped
- 2 TBS oil
- 2 TBS plus 1/2 C butter divided
- 1/2 C chicken broth
- 1 bottle (8 oz) clam juice
- 1 LBS bay scallops
- 1 LBS uncooked small shrimp peeled and deveined
- 1 pkg (8 oz) imatation crabmeat chopped
- 1/4 tsp white pepper divided
- 1/2 C flour
- 1 1/2 C milk
- 1/2 tsp salt
- 1 C whipping cream
- 1/2 C Parmesan chees divided
- 9 lasagna noodles cooked and drained
Cinnamon Biscuit Peach Cobbler

Combine flour 1 TBS brown sugar baking powder salt and baking soda
- 1 1/2 C flour
- 1 TBS plus 1/3 C packed brown sugar divided
- 2 tsp baking powder
- 1/4 tsp salt
- 1/3 tsp baking soda
- 6 TBS cold butter
- 1/2 C milk
- 2 TBS butter melted
- 3/4 C chopped walnuts
- 3/4 tsp cinnamon
- Filling
- 1 C packed brown sugar
- 2 TBS cornstarch
- 3/4 tsp graed lemon peel
- 1 C water
- 9 C sliced peeled peaches
Chocolate Coconut Slices

Thes goodies taste just like a Mounds bar
- 6 TBS butter softened
- 1 C powdered sugar
- 1 egg
- 2 squares 1 oz each unsweetened chocolate, melfted and cooled
- 3 tsp vanilla
- 1 1/2 C flour
- 1/2 tsp baking soda
- Filling
- 1/3 C cream cheese softened
- 1 tsp vanilla
- 1 C flaked coconut
- 1/2 C finely chopped pecans
Sizzling Beef and Scallions

In a med bowl toss the beef with 1 TBS soy sauce
- 8 oz London broil sliced into short thin strips
- 2 TBS soy sauce
- 1/4 C plus 2 TBS oil
- 10 scallions green parts thinly sliced white parts cut into 1 inch pieces
- 2/3 C chopped red bell pepper
- 1 TBS finely chopped fresh ginger
- 2/3 C frozen peas thawed
- 3 large eggs lightly beaten
- 1/2 tsp sugar
- 4 C cooked white rice chilled
Cocktail Sauce

Cut the lemon in half and add to large pot of boiling salt water
- 1 lemon
- salt
- 2 lbs large shrimp about 30
- 1/2 C Heinz chili sauce
- 1/2 C ketchup
- 3 TBS prepared horseradish
- 2 tsp fresh lemon juice
- 1/2 tsp Worcestershire sauce
- 1/4 tsp hot sauce (Tabasco)
