Cherry Chocolate Chunk Refrigerator Oatmeal

In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, honey & vanilla
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 1 teaspoon honey, optional (or substitute any preferred sweetener)
- 1/2 teaspoon vanilla extract
- 1 tablespoon finely chopped dark chocolate
- 1/4 cup chopped cherries (fresh or frozen)
Veggie Soup with Seitan | Vegan-In

As I had warned, here come the soups
- 4 Celery stalks, diced
- 5 Carrots, sliced
- 4 Potatoes, medium, cubed
- 1 Onion, small, diced
- 1 Cup Kale, chopped
- 1/4 Recipe Seitan (1 “log”), cubed small
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1-2 Tbsp Earth Balance Butter, for sauté
- 8 Cups Water
- 3-4 Bullion Cubes
Asian Slaw with Red Chili “Peanut” Dressing

Asian Slaw: 1. Toss all ingredients in large bowl
- Asian Slaw:
- 5 cups chopped Napa cabbage
- 1 cup chopped purple cabbage
- 4 carrots, julienne cut (This is my favorite tool for that: peeler, julienne blade )
- 4 scallions, sliced
- 3 oranges, supremed (or sliced)
- Dressing:
- 3 tablespoons water
- 2 teaspoons golden flax, freshly ground
- 2 tablespoons raw almond butter
- 2 tablespoons Braggs Liquid Aminos, or low sodium tamari
- 1 tablespoon grade B pure maple syrup
- 2 teaspoons raw apple cider vinegar
- 1 teaspoon garlic chili sauce (see below)
- Raw HOT Chilli Garlic Sauce:
- 6 ounces hot chilies, chopped
- 3 cloves garlic, chopped
- 1/2 teaspoon Himalayan salt
- 1 1/2 teaspoon coconut crystals (or sweetener of choice)
- 1 1/2 tablespoons raw apple cider vinegar
Homemade Vegan Mayonnaise

Put everything in the blender and process until it is thick
- 1/2 cup of soy milk, plain and preferably unsweetened
- 1 cup plus 2 tablespoons of canola oil
- 1/4 teaspoon of apple cider vinegar
- 1/4 teaspoon of agave
- 3/4 teaspoon of kosher salt
- 1/2 tablespoon of fresh lemon juice
- zest from 1/8 of an organic lemon
- 1/8 teaspoon of dry mustard

- 3/4 teaspoon onion powder

Banana Split Smoothie Recipe

Blend all ingredients in a high speed blender until very smooth and enjoy!
- 2 frozen bananas
- 2 cups frozen strawberries
- 1 Tbs Coconut Milk Powder - (I love Wilderness Family, you can find them online or at your local health food store)
- 2.5 Tbs pure Chocolate Powder(Nativas Natural is my favorite)
- 1 -1.5 cups Unsweetened Almond Milk
- 2 squirts NuNaturals Vanilla Stevia
Kale Pistachio Pesto Recipe

Place all ingredients except for pasta water in a food processor or blender
- 2 cups packed kale leaves
- 1/2 cup shelled pistachios
- 2 Tbsp grated Parmesan cheese (or a "Mock" Parmesan)
- 1 tsp minced garlic
- juice from half a lemon
- 1/2 tsp kosher salt
- 1/4 cup olive oil
- 1/2 cup water from cooked pasta
Banana Cream Chia Pudding (gluten-free, vegan, refined sugar-free)

Puree everything but the chia seeds in a blender until smooth, combined and thick
- cup lite coconut milk (the canned kind)
- 1 cup unsweetened almond milk
- 2 bananas
- 2 teaspoons vanilla
- 3 medjool dates, pits removed
- 2 tablespoons chia seeds
Avocado-Banana Smoothie Recipe

Combine the avocado, orange juice, bananas, yogurt and sugar in a blender and puree until smooth
- 1 avocado, halved, pitted, and peeled
- 1/2 cup fresh orange juice, from 1 medium orange
- 2 bananas
- 1/4 cup plain yogurt
- 2 tsp sugar
- 1 tbsp freshly grated ginger
- Juice of 1 lime
- 1/2 tsp salt
