Lighter Blueberry Muffins

Preheat oven to 400°F. Spray a 12-cup muffin tin with nonstick spray or line with paper liners
- 1 3/4 cups all-purpose flour
- 2/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons cold butter, cut into pieces
- 1/2 cup fat-free milk
- 1/2 cup low-fat (2%) Greek-style yogurt
- 1 large egg
- 1 tablespoon grated lemon zest (about 2 lemons)
- 1 cup fresh or frozen blueberries
Whole Wheat Chocolate Zucchini Muffins

Place grated zucchini in a strainer and drain as much liquid off as you can
- 1/2 cup butter
- 1/2 cup oil
- 1 1/2 cups white sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup whole wheat flour ( I used whole wheat pastry flour)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons unsweetened cocoa powder
- 2 1/2 cups grated zucchini, I used the smallest side of my grater b/c I like it small. ( I did not really measure this. I used 1 med zuch.)
- 1/2 cup semisweet chocolate chips
No Knead Yeast Rolls

In large bowl, combine warm water (not too hot or it will kill the yeast), yeast & sugar
- 2 cups warm water
- 2 Tbsp yeast
- 1/2 cup sugar

- 1 1/4 cupsflour

Heat oven to 375°F. Combine brown sugar, butter and peanut butter in large bowl

Super Easy Pot Roast

Preheat oven to 350 In a shallow dish, combine steak seasoning and flour
- 1 good sized roast (this was about 3 lbs)
- 1/2 cup flour
- 2 tbsps McCormick's Montreal steak seasoning (or black pepper and kosher salt to taste)
- 1 tbsp oil
- 4 large potatoes peeled and quartered
- 4 carrots peeled and cut into chunks
- 2 medium onions quartered
- 1 can diced tomatoes (I use Muir Glen fire roasted tomatoes)
- 6 whole cloves garlic
- 1 packet Lipton's dry onion soup mix (yeah, just roll with it. it works)
