Ingredients

  • 1 good sized roast (this was about 3 lbs)
  • 1/2 cup flour
  • 2 tbsps McCormick's Montreal steak seasoning (or black pepper and kosher salt to taste)
  • 1 tbsp oil
  • 4 large potatoes peeled and quartered
  • 4 carrots peeled and cut into chunks
  • 2 medium onions quartered
  • 1 can diced tomatoes (I use Muir Glen fire roasted tomatoes)
  • 6 whole cloves garlic
  • 1 packet Lipton's dry onion soup mix (yeah, just roll with it. it works)

Preparation

Step 1

Preheat oven to 350

In a shallow dish, combine steak seasoning and flour. Dredge roast in it. In a dutch oven, sear meat over high heat in oil just until surface is browned. Pour enough water into pot to halfway cover meat.

Roast for 3 hours (yes that seems like a long time but trust me, the meat will fall apart) Pull out of oven and toss the veggies and garlic on top and sprinkle the soup mix over it. Then dump in the can of tomatoes. Put lid back on and cook for another hour
