No Knead Yeast Rolls

- 2 cups warm water
- 2 Tbsp yeast
- 1/2 cup sugar
- 3 eggs, whipped lightly
- 3/4 cup melted butter
- 6 cups flour

Step 1
In large bowl, combine warm water (not too hot or it will kill the yeast), yeast & sugar. Give it a few minutes to make sure the yeast is working. Then add eggs & melted butter. Mix well. Start to whisk in the flour, one cup at a time. Around cup 4, switch to a spoon. Dough will be sticky. Scrape down the sides & cover bowl with plastic wrap and a towel. Set aside in a warm place & allow to rise until doubles in size (if in a hurry, wait 20 mins...works best if you can wait 60 mins). Punch dough down to get the air out. Dust with flour. Work with half the dough at a time & spread into a circle on a floured work surface, dusting with flour as needed to make it easy to work with. Use a pizza cutter to cut into wedges. Roll each wedge into a crescent roll shape. Place rolls onto a greased baking sheet. Bake at 400 for 10-12 mins. Brush with a little butter once cooked. Remove from baking sheet & let cool on a cooling rack.
