BUTTERY VANILLA PUDDING POUND CAKE

Preheat oven to 325ºF. Grease a 10-cup tube pan with butter and flour
- 3 cups all-purpose flour (plus more for pan)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter (softened to room temperature, plus more for greasing pan)
- 2 cups sugar
- 5 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 cup vanilla pudding (store-bought, room temperature)
- VANILLA/CHOCOLATE GLAZE
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1-2 tablespoons cocoa powder (optional)
Chili Cornbread Pie

Heat the oven to 400 F. Coat a deep 9-by-9-inch pan with cooking spray
- For the Chili:
- 1 1/2-pounds lean ground beef
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 16-ounce jar salsa
- 1 chipotle pepper, minced (from a can of chipotles in adobo)
- 2 tablespoons adobo sauce (from a can of chipotles in adobo)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and ground black pepper
- For the Cornbread:
- 1 1/2-cups all-purpose flour
- 1 cup corn meal
- 3 tablespoons sugar
- 2 1/2-teaspoons baking powder
- 1 teaspoon kosher salt
- 1 1/4-cups milk
- 1 egg
- 1/2-cup (1 stick) unsalted butter, melted
- 3 scallions, sliced
- 1 cup frozen corn kernels, thawed (optional)
- 1/4-cup sliced pickled jalapenos, lightly chopped
- For Serving:
- 1/2-cup guacamole
- 1/2-cup sour cream
- 1/2-cup shredded cheddar cheese

Mediterranean Orzo Pasta With Feta Cheese

Prepare the pasta following the instructions on the package, but omit the fat and salt from it
- 1 cup of orzo pasta (uncooked)
- 2 cups of baby spinach (prewashed and chopped)
- 1/2 cup of sun-dried oil-packed tomatoes (halved, chopped, and drained)
- 3 tbsp of red onion (chopped)
- 3 tbsp of kalamata olives (chopped)
- 1/2 tsp of ground black pepper
- 1/4 tsp of salt
- 1 can of artichoke hearts (marinated and undrained)
- 3/4 cup of feta cheese (crumbled and divided)
CHUTNEY CHEESE BALL

- 1 pound cream cheese (softened to room temperature)
- 2 tablespoons sour cream
- 1/2 cup currants
- 1/2 cup walnuts (toasted and chopped)
- 1/2 cup scallions (thinly sliced)
- 1/2 teaspoon ground curry powder
- 1/2 teaspoon salt
- 1/2 jar mango chutney (about 4 ounces)
- 1 cup shredded, sweetened coconut flakes
