SMOTHERED PORK CHOPS WITH SWEET & SOUR PEPPERS

Season the pork chops with salt and pepper
- 4 center-cut pork chops (1-inch thick, bone-in)
- 1-2 cups all-purpose flour (for dredging)
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons ground fennel seed
- 2 red bell peppers (cut into 1/2-inch thick slices)
- 2 yellow bell peppers (cut into 1/2-inch thick slices)
- 3 cloves garlic (crushed)
- 1 cup white wine
- 4 tablespoons red wine vinegar
- 2 tablespoons honey
- 1/2 cup mint leaves (chopped, to garnish)
- 1/2 cup parsley leaves (chopped, to garnish)
- kosher salt and freshly ground black pepper (to taste)
Chicken Salad with Fennel, Orange & Blueberries

Heat 2 tablespoons olive oil in a large frying pan over medium-low heat
- tablespoons olive oil, divided
- 3/4 pound chicken breasts, boneless, skinless
- 1/2 cup orange juice, plus 3 tablespoons, divided
- 3 tablespoons stone ground mustard
- 3 tablespoons honey
- 2 tablespoons vinegar
- zest of one orange
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 large oranges
- 1 each fennel bulb, trimmed and coarsely diced
- 8 cups mixed greens
- 1/2 cup red onion, thinly sliced

- 1/4 pound banana peppers
- 1/2 cup red wine
- 1/2 cup red wine vinegar
- 1/2 cup granulated sugar

- 1/4 cup red onion (peeled, sliced 1/4-inch thick)

BLACK BEAN TACOS WITH TANGY CABBAGE

Heat the oven to 400º. Coat a rimmed baking sheet with 1 tablespoon of the oil
- 8 6- inch Corn or Whole Wheat Tortillas

- 2 cups Cooked Black Beans (drained)

- 1 tablespoon Chili Powder

- 4 cups shredded Green Cabbage

- 1 Jalapeno or Serrano Chile (minced)

- Juice of 2 limes

Cottage Cheese with Vegetables

- 1 green onion, sliced
- 1 cup cucumbers, chopped
- 1/4 cup green or orange or red peppers, cut in small pieces

- 1 package spaghetti, 12 ounces
- 1/2 cup olive oil
- 2 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 2 each shallots, finely chopped
- 4 cups vegetables, try zucchini,red and orange peppers, cubed
- 6 tablespoons butter
- 1 1/2 cups heavy cream
- 1 cup parmesan cheese, shredded

- 3 large sweet onions, cut into 1/4-inch dice
- 2 parsley sprigs
- 2 bay leaves
