- 6 (6- to 8-ounce) boneless, skinless chicken breasts
- Salt and pepper
- 5 teaspoons olive oil
- 1 onion, chopped
- 1 (6-ounce) can tomato paste
- 4 garlic cloves, minced
- 3/4 teaspoon dried oregano
- 1/8 teaspoon red pepper flakes
- 1 (28-ounce) can diced tomatoes, drained well
- 1 tablespoon cornstarch
- 1 tablespoon water
- 6 ounces mozzarella cheese, shredded (1 1/2 cups)
- 1/4 cup grated Parmesan cheese
- 3 tablespoons chopped fresh basil
- 1/3 cup panko bread crumbs

Apple Almond French Toast

Directions Slice bread into 1-1/2 inch slices
- 1 large loaf French bread
- 8 large eggs
- 3-1/2 C. milk
- 1 C. sugar
- 1 Tbs. vanilla
- 1 tub whipped topping (low sugar if desired)
- 3 tsp. cinnamon
- 1 tsp. nutmeg
- 6 to 8 medium-sized cooking apples
- 1 C. diced almonds
- 2 Tbs. butter
