Eggplant Caviar

An old favorite in Russia, this dish calls for large purple-globe eggplants
- 2 purple-globe eggplants, (1 1/2 pounds each)
- 1/4 cup minced onion
- 2 plum tomatoes, seeded, finely chopped
- 1/4 cup roughly chopped fresh flat-leaf parsley
- 1/2 cup extra-virgin olive oil
- 1 1/2 teaspoons freshly squeezed lemon juice
- Coarse salt and freshly ground pepper
- Pita or rye bread, for serving
Baked Rigatoni Cake

Preheat oven to 400 degrees
- Salt
- 1 pound rigatoni pasta
- 2 tablespoons olive oil
- 1 pound ground meat (beef, pork, or turkey)
- 2 garlic cloves , minced
- 1/4 teaspoon freshly ground pepper
- 1 can (28 ounces) crushed tomatoes
- Butter, for pan
- 1 cup finely grated Parmesan cheese
- 8 ounces coarsely grated mozzarella cheese
