Chocolate Cheesecake Candy Cane Bars

Preheat oven to 350 degrees F
- Crust:
- 20 chocolate wafer cookies
- 3 tablespoons unsalted butter, melted
- 1 tablespoon sugar
- 1/2 teaspoon ground coffee beans
- 1/4 teaspoon fine salt
- Filling:
- 8 ounces semisweet chocolate, finely chopped
- 8 ounces cream cheese, room temperature
- 2/3 cup sugar
- 1/2 cup sour cream
- 2 large eggs, room temperature
- Glaze:
- 4 ounces bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 teaspoon light or dark corn syrup
- 2 tablespoons sour cream, room temperature
- 1/2 cup crushed candy canes (see Cooks Note)
Cappuccino Brownies

For brownies: Preheat oven to 325°F
- Brownies:
- Nonstick vegetable oil spray
- 1/2 cup (1 stick) unsalted butter, diced
- 3 ounces unsweetened chocolate, chopped
- 1 1/2 cups sugar
- 3 large eggs
- 1 tablespoon instant espresso powder
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3/4 cup all purpose flour
- White Chocolate Ganache:
- 6 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
- 5 tablespoons heavy whipping cream
- 1/4 teaspoon ground cinnamon
Cinnamon Bun Popcorn

preheat oven to 250 degrees Place popcorn and chopped pecans in a large bowl and set aside
- 12 C popped popcorn (about 1/2 C kernels)*
- 1 C roughly chopped pecans
- 1 C brown sugar
- 3/4 t cinnamon
- 1/4 C Karo syrup (or honey makes a good substitution)
- 1 stick real butter (1/2 C)
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 3 squares almond bark
- You can use air popped or microwave popcorn. If using microwave, anything works, but I prefer a “natural” flavor that’s low in butter and salt.
Mini Peppermint-Meringue Cups With Ganache

1.Preheat oven to 175 degrees
- For the meringue cups:
- Vegetable oil cooking spray
- 3 large egg whites, room temperature
- 3/4 cup sugar
- 1/4 teaspoon pure peppermint extract
- Red gel-paste food coloring (sugarcraft.com)
- For the ganache:
- 6 ounces bittersweet chocolate, chopped
- 1 cup heavy cream
- Garnish: 1 large candy cane, finely chopped
